We caught up with the brilliant and insightful Tracy Hutchins a few weeks ago and have shared our conversation below.
Alright, Tracy thanks for taking the time to share your stories and insights with us today. Taking care of customers isn’t just good business – it is often one of the main reasons folks went into business in the first place. So, we’d love to get a conversation going around how to best help clients feel appreciated – maybe you can share something you’ve done or seen someone do that’s been really effective at helping a customer feel valued?
One of the best ways we show customers appreciation is by treating them like family from the moment they walk through the door. At Hutchins BBQ, hospitality is just as important as what’s coming out of the pit. We want folks to feel like they’re more than just another order, they’re guests in our home.
Some of the most meaningful moments have come from seeing families grow up with us. We’ve had people come in as kids with their parents and then, years later bring in their own children. We’ve been part of birthdays, graduations, celebrations and everyday meals that turned into traditions, and that kind of loyalty means the world to us.
Our barbecue is delicious on its own, but being welcomed, remembered, and cared for is what keeps folks coming back. That’s the kind of feeling we hope every customer leaves with.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
My name is Tracy Hutchins, and I’m the co-owner of Hutchins BBQ. Barbecue has been part of my life from the very beginning. In 1978, my father attached Roy’s Smokehouse to our family home in Princeton, Texas, so my brothers and I quite literally grew up living and breathing Texas barbecue. This isn’t just a business to me, it’s family, faith, tradition and legacy all rolled into one.
At Hutchins BBQ, we serve true Texas barbecue, made low and slow with quality ingredients and a whole lot of care. We’re known for our USDA Prime brisket, beef ribs, Texas Twinkies (our bacon-wrapped brisket and cream cheese-stuffed jalapeños), homemade sides and all-you-can-eat dessert for dine-in guests. We also offer catering, to-go service and nationwide shipping for our barbecue family outside of DFW.
What sets us apart is our consistency, our hospitality and our commitment to staying true to what Texas barbecue ought to be.
What I’m most proud of is the culture we’ve built. We’ve got an incredible team, many of whom have been with us for years, and guests who return again and again because they know they’ll get both great food and a warm welcome. I’d want people to know Hutchins BBQ is about more than a meal, it’s about carrying on a family legacy and doing things the right way.

What do you think helped you build your reputation within your market?
Our reputation has come from staying true to who we are while continuing to raise the bar. At Hutchins BBQ, that starts with faith, hard work and a real respect for Texas barbecue tradition. We’ve never wanted to just be another spot serving smoked meat; we’ve wanted to build something lasting, something people associate with excellence, integrity and true Texas hospitality.
Part of that reputation comes from the fact that Hutchins feels larger than life while still being approachable. We’ve been blessed to earn major recognition over the years from Texas Monthly’s Top 50 Best BBQ Joints to multiple Best in DFW honors, and we’ve been seeing menu items like the Texas Twinkie take on a life of their own. We’ve even created a national day to celebrate them on Oct. 16. We’ve also had exciting moments with people and partners who love what we do, whether that’s a nod from Keith Lee or collaborations with athletes like Quinn Ewers. Those moments help spread the word, but they only matter because the food and experience back it up.
I also think people connect with the fact that Hutchins is a living, breathing legacy. This business has grown across generations, not just in the dining room, but behind the scenes, too. We’ve got family members working in leadership, catering and in the pits, and we’ve also seen that same spirit reflected in our team, including fathers and sons learning the craft side by side. That’s what gives Hutchins its soul. It’s not just a restaurant, it’s a place where tradition is passed down, and standards are upheld.

How do you keep your team’s morale high?
The biggest thing is to treat your people with respect and making sure they know they matter. If you want a strong team, you have to build a culture where people feel valued, supported and proud of the work they’re doing. At Hutchins BBQ, we’ve always tried to treat our staff like family, because that’s exactly what they are to us.
At the same time, high morale comes from having clear standards and leading by example. In this business, no job is too small, and your team notices when you’re willing to roll up your sleeves right alongside them. When people feel supported and see that everyone is working toward the same goal, it creates a strong sense of pride.
