Hi Tony, thanks for joining us today. Do you think folks should manage their own social media or hire a professional? What do you do?
I currently manage my own social media platform but I’m currently looking for a team. I cook and I’m very good at cooking. My goal is to put all my energy into what I’m good at and outsource everything else. My initial thought was that I could do it all, you know, be a jack of all trades and master of none. The problem with that thinking, I’m learning, is that mastery breeds success. I would encourage anyone to master their craft and seek opportunities to collaborate with masters of other crafts.
Tony, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
I come from a large matriarchal family and most of our time spent together was around some type of meal. I fell in love with cooking because it was the way I was taught to show love. As a personal chef, I have the opportunity to recreate those memorable moments with my family for my clients. While I prepare a delicious meal, they can focus on one another and connect. From setup to cleanup, my service is not just incredible food, it is facilitating opportunities for fellowship and making lasting memories.

Learning and unlearning are both critical parts of growth – can you share a story of a time when you had to unlearn a lesson?
One valuable lesson I’ve had to unlearn during my culinary journey is the notion that gourmet cooking is always complicated and time-consuming. In the past, I used to believe that the more complex the recipe, the better the dish would be. However, over the years, I’ve come to realize that simplicity can often yield the most delicious results.
Now, I focus on using high-quality, fresh ingredients and mastering essential cooking techniques. This approach allows me to create amazing, restaurant-quality meals that are not only delicious but also achievable for my clients at home. A few months ago, I had the opportunity to cater a high-profile event for a client who had requested an intricate and challenging menu. I had meticulously planned every detail, from the menu to the preparation, and I was confident in my culinary skills. However, on the day of the event, everything that could go wrong seemed to go wrong.
First, a key ingredient I needed was not delivered on time due to a supplier mix-up. Then, a power outage occurred in the middle of meal preparation, causing chaos in the kitchen. To make matters worse, I accidentally spilled an entire tray of appetizers just as they were about to be served. It felt like a disaster unfolding before my eyes.
In that moment, I had a choice: I could panic and let the situation overwhelm me, or I could adapt and overcome the challenges. I decided to stay calm, quickly improvise with the available ingredients, and adapt my cooking techniques to accommodate the power outage. I also had two assistants who rallied with me, helping to salvage the situation by re-preparing the spilled appetizers.
In the end, the event turned out to be a success. The client and guests were thrilled with the meal, and I received compliments on my ability to handle adversity with grace. This experience taught me the importance of resilience in the culinary world and reinforced the idea that challenges are an inevitable part of any journey. By staying adaptable and resilient, I can overcome unexpected obstacles and continue to deliver exceptional culinary experiences for my clients.
