We caught up with the brilliant and insightful Alvaro Baeza Valiente a few weeks ago and have shared our conversation below.
Alvaro, looking forward to hearing all of your stories today. What’s the backstory behind how you came up with the idea for your business?
As a native of Spain, I have always been attached to the vibrant flavors and rich culinary traditions of my homeland. In 2018, while living in San Diego, I saw a unique opportunity to introduce the city to the authentic tastes of Spain that I grew up with.
Friends and family in San Diego were constantly raving about the tapas and paella I prepared for gatherings, urging me to share these culinary delights with a wider audience. Inspired by their enthusiasm and encouragement, I began researching the local catering market and noticed a gap that my Spanish culinary expertise could fill.
Determined to bring the essence of Spanish cuisine to San Diego, I perfected my recipes, ensuring every dish was a true reflection of the traditions and flavors of Spain. With a strong belief in the power of food that brings people together, I decided to start my own catering company, Tapa Stand, specializing in tapas and paella.
Tapa Stand quickly became known for its authentic dishes and exceptional service, creating memorable dining experiences for events big and small. Whether it is a casual backyard party or an elegant wedding, our tapas and paella bring a taste of Spain to every occasion!

I was born and raised in Spain, where the rich culinary traditions and vibrant flavors of Spanish cuisine were a fundamental part of my upbringing. From an early age, I spent countless hours in the kitchen, helping my family prepare meals and learning the secrets of our cherished recipes.
I attended hospitality school in Madrid, Spain, where I perfected my culinary skills and gained invaluable knowledge about the food and hospitality industry. Immersing myself in the local catering scene in San Diego, I learned the ins and outs of the industry and perfected my recipes to ensure every dish was a true reflection of Spain’s culinary heritage.
At Tapa Stand, we specialize in providing authentic Spanish tapas and paella for a variety of events, from intimate dinner parties to large celebrations. Our menu features a diverse selection of traditional Spanish dishes, all prepared with the freshest ingredients and a commitment to authenticity. How about pivoting – can you share the story of a time you’ve had to pivot?
When Covid hit in 2020, it brought unprecedented challenges to the catering industry. Large gatherings were put on hold, events were canceled, and our usual way of doing business suddenly came to a halt. But where others saw obstacles, we saw an opportunity to innovate and adapt. With traditional catering off the table, we pivoted to offer a new type of service—delivering gourmet Spanish meals directly to our customers’ homes.
Our ability to pivot and adapt quickly not only helped us weather the storm, but also expanded our reach and deepened our connection with our customers. The positive feedback we received for our home delivery service and virtual offerings was incredibly rewarding, and it reaffirmed our belief in the power of resilience and innovation.


Do you have multiple revenue streams – if so, can you talk to us about those streams and how your developed them?
We partner with different companies all over San Diego during weekdays to serve our food in their cafeterias. This allows us to reach a wider audience and provide a taste of Spain to employees during their lunch breaks, further extending our brand’s presence and impact.
