Alright, Christophe thanks for taking the time to share your stories and insights with us today. What’s been the most meaningful project you’ve worked on?
Throughout my career , I have been dreaming to compete on the world chocolate master competition. I have been working on this project for the last couple years and got the title of 2021 USA Chocolate Master last October after passing the national Selection. I am and will be proud to represent USA in France for the final where 18 countries will be represented this coming October 2022. I already accomplished my dream and be able to have the American flag on my chef jacket collar is so meaningful to me.
The World Chocolate Master is the biggest competition in the chocolate industry and it took me a lot of sacrifice in order to get to that level.
I actually quit my full time job in order to fully focus on the preparation of this competition and look forward to be in Paris in my own country to compete for the final.
Today , as scary as it can sound, something deep in me is telling me that I need to go through this experience and do my best work I ever done, whatever the end result, I want to be able to show up and do my best performance.
 
  
  
 
Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers
I am been a Pastry Chef/Chocolatier for over twenty years and started my career in South of the France. After working for Michelin stars restaurants and being an assistant pastry instructor at ENSP , one of the renowned pastry school in France I decided to come in USA to pursue my career.
I landed in Las Vegas and worked for Mgm Resort International for about 7 years. once I got my green card, I got the opportunity to come in San Diego as the Executive Pastry Chef for a 5* 5 Diamonds hotel , The Park Hyatt Aviara.
One things after another I got to participate in two different Food network competition and won both Halloween Wars and Holiday Wars.
You can also see me on a baking show on Netflix called “Bake Squad”. I am one of the cast member and known for being a Pastry illusionist ,Most of my creations look like something but taste like something else. One example is the life size drum set made entirely with Chocolate filled with cheesecake, chocolate cake and peanuts chocolate bar.
Most recently I participated in the USA National selection for the world Chocolate Master competition and been recognize as 2021 USA Chocolate Master. I will be representing USA this coming October in Paris for the Final of the WCM.

Is there mission driving your creative journey?
Throughout the World Chocolate Master , I want to create an awareness in the chocolate industry about the conservation of the Ocean, if we don’t have the ocean , then we have nothing. Too much trash are landing in the water and is a big problem today.
Plastic becomes micro plastic and ultimately finish in our plate. Marine animals are suffering from it. Global warming is a big issue also as it affect tremendously the coral, a concern called coral bleaching which drive fishes from nutrients and habitats.
if each one of us reduce the use of plastic that will be already a big progress.
 
  
 
Can you share a story from your journey that illustrates your resilience?
I have a dream…. such an inspiration sentence and thank you to Martin Luther King. My dream is to become the next World Chocolate Master and I took a big risk in my career , I had everything I could wish for , being the pastry chef for a beautiful resort in north California with a really good salary and a quality of life that I never had before. It was really hard to take the decision to leave the hotel and give up on my stable incomes, and all the great benefits that the company offered, in reality I couldn’t focus on taking care of my team anymore and trying to achieve perfection for the competition , I needed time and I HAD TO MAKE A CHOICE, and I choice my Passion. The uncertainty of making ends meet was really scary and still is to be honest but something in my gut pushes me to keep going as it is a true passion and I really enjoy what I am doing every single day.
What is the point to makes money if you are not totally happy with what you are doing on a daily basis????
I am confident that if I continue to be true to my self and do what I really love to do. Money will come.
My wife always telling me . No worry about money, God will provide , he always do.
Is it a risk? yes 1000% but if we don’t take risk we will never know what we missed.
