Today we’d like to introduce you to Noé Camacho.

Hi Noé, so excited to have you with us today. What can you tell us about your story?
Well, I’m from angostura, Sinaloa, Mexico, it’s a tiny, calm and beautiful city, I love this place, but there is not much to learn about the world there, people usually don’t see more than they noise, they don’t want to know what is happening though the walls.

I’m very curious about everything, my mom loves to cook and I love eat her food, she used to see a lot food programs on tv and when I was younger, we saw those tv programs together. I always wondered how those meals teased. Without knowing I start to love the kitchen, my mom is not a chef, but I bet she is better than a lot I know. So I used to cook very easy meals.

When I was in high school, everyone start asking me “in which university are going to study?” “What do you like?” I think not everyone is prepared to decide their future at this age, but some how I was very decide that I would go to culinary school.

Get it was easy, the hard part was stay, not everyone told you that been in a kitchen is heavy, but I love it, i learn a lot, I made a lot of friends and I knew a lot of more.
One day I said to me,” if I what more than the rest, I have to do more than the rest, but, what I have to do?” Ido, the universe has a lot of gifts to you and listen you always, so there was an opportunity to work in the summer in the US, at New York, the city of my dreams, it was a big opportunity and I take it, I learned so much about life, kitchen, culture, it changed my mind and all my perspective about my goals in life, it was a voice inside of me that said “If I could make true this dream, so I could make true whatever I want” so I started to dream bigger.

That part in my life was very important, because now I know that I can go beyond the walls, all I need is dreaming and the universe gives the tools.

When I star my bakery in 2020, I had nothing than I small mixer and I used to bake in a small oven. Now, I have 2 refrigerators, 2 ovens, 4 racks and a lot of kitchen tools and more thing I need to work, and I know it’s just de beginning.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
I think the most important struggle was do the same thing over and over. Over the 60% of the entrepreneurship crash in the first year, and I think is because there are not consistent or they don’t see that a business it’s like a baby, you have to stay along the business and take its hand.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
Im a baker, I’m a specialist in sour dough, but, as a chef, I love to travel and try new flavors, so in my bakery i make different types of breads form all the parts of the word I ever visit. I divided to specialize in this because where I am, the bread it’s so good, so, I was thinking, what could I made different? And one day I wanted to eat a bagel, but there were no place near where I can buy one, so I made it, it was no hard, but it make me sense, I could specialize in a different kind of bakery, a international one. At the beginning it getting known by the people was hard, but, once they tried it, well, they were in. So slowly the bakery started to get known and now the bakery is four year since I open it at my house

Can you tell us more about what you were like growing up?
I was very curious about everything, it’s normal that a kid at four years old, but I always been that way, now days I’m still very curious, I need to know the why of everything.

I’m the last of 6, I have 3 sister and 2 brothers, so I was very spoiled kid, I was very friendly, I had not problem to make new friends, I loved the food, my parents always brought me table games because I love to play it. I used to play video games, but not a big fan, I liked to play soccer, baseball, been in my bicycle and travel for all my neighborhood
