We caught up with the brilliant and insightful Yuri Tirrito a few weeks ago and have shared our conversation below.
Alright, Yuri thanks for taking the time to share your stories and insights with us today. Often outsiders look at a successful business and think it became a success overnight. Even media and especially movies love to gloss over nitty, gritty details that went into that middle phase of your business – after you started but before you got to where you are today. In our experience, overnight success is usually the result of years of hard work laying the foundation for success, but unfortunately, it’s exactly this part of the story that most of the media ignores. Can you talk to us about your scaling up story – what are some of the nitty, gritty details folks should know about?
Since we opened Tirrito Farm in April 2022 it’s been quite the adventure. Learning what is important to our customers is really what has continued to drive our growth.
We have just completed an expansion of our dairy so we can continue to supply milk and cheese to our own restaurant and to many local hotels and business.
We have also had to increase the size of our brewery in order to meet the growing demand for our beer.
One of the major things we have learned is that due to our remote location, many people want to come out, but do not want to have to drive home. So, by the end of the year, we will have completed the construction of six glamping domes which will increase our capacity for overnight stays to around 40 people.
This will allow larger groups and companies come out and stay for the weekend. Along with this we also have built a paintball course which is a great team building activity.

Where do you think you get most of your clients from?
We have tried many different methods of advertising and have found that works best for us is word of mouth. We built a pretty unique destination in Southern Arizona and try to create a great experience for our customers, and it is those customers that help us spread the word. We have an incredible loyal customer base and are very grateful for that.
Can you talk to us about manufacturing? How’d you figure it all out? We’d love to hear the story.
Pretty much every aspect of our business we learned on the fly. Neither of us have a background in construction, dairy, microbreweries, restaurant services, viticulture or agriculture. We learned through trial and a lot of error. Sometimes I feel like we have made more mistakes than things we have done right but it is all part of the process and in the end it has made us a better business.
