We caught up with the brilliant and insightful Wise Acre Eatery a few weeks ago and have shared our conversation below.
Wise Acre, appreciate you joining us today. Risk taking is something we’re really interested in and we’d love to hear the story of a risk you’ve taken.
Doing things differently-in our opinion, the right way-can always feel like a risk. Operating a true farm-to-table restaurant and operating a regenerative agriculture farm is not always easy. There are many ways to cut corners but ultimately that wouldn’t keep us true to ourselves and our mission. What we do is special, and you can taste it in the food.
Wise Acre, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Wise Acre Eatery is a true farm-to-table restaurant. Our farm is in Plato, MN (just 45 minutes away from Minnneapolis) and we grow 90% of the food served at Wise Acre. Our menu is hyper-seasonal, often changing depending on what’s growing or at peak freshness at the farm.
Have you ever had to pivot?
When the pandemic hit, we really had to pivot. We decided to create space in our restaurant to host a year-round indoor farmer’s market. This was such a success that we decided to continue. Now, you can come enjoy a fresh, seasonal meal at Wise Acre, and shop our market for the best local produce, meat and eggs around.

Owners Scott Endres and Dean Englemann met in college while studying horticulture, became friends and have now been in business together for 20 years.
