We were lucky to catch up with Wes Brewer recently and have shared our conversation below.
Wes, looking forward to hearing all of your stories today. Let’s start with the story of your mission. What should we know?
I am a creator of BBQ Fusion Food. I strive to create the most unique food while still incorporating my BBQ roots.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
At the end of 2020, right before Christmas and during the pandemic my father lost his job after 35 years in the culinary industry. With uncertainty, his future as a chef had come to an end. I decided to boost his spirits and create Wolf Down immediately in January 2021, which is an idea I had been playing with.
With my love for BBQ and his culinary background, we decided to create our own style of food called Puro Pinche TX BBQ Fusion. Local breweries & Brew Pubs have given the start I needed to become well known in the community by allowing me to showcase my food at their establishments.
What’s worked well for you in terms of a source for new clients?
Quirky advertisements have given me a boosts in new clients. I create ads using 90’s -2000’s pop culture for my menu. Ex: Limp Brisket (Brisket Taco), Notorious T.O.T. (Loaded Tater Tot w/ Brisket) and Curry Up & Buy (Coconut Curry Wings)

Any stories or insights that might help us understand how you’ve built such a strong reputation?
Just plain good Salt & Pepper TX Style Brisket and special prep routine that never changes. K.I.S.S. method = Keep It Simple Stupid.
