Walter, thanks for taking the time to share your stories with us today Alright, so you had your idea and then what happened? Can you walk us through the story of how you went from just an idea to executing on the idea
Having an idea for a business and actually building one are two very different things. Something we learned early on. Once we filed for our LLC and started pouring in time, money, and effort, everything began to feel real. And just yesterday, when we received our first shipment of jars, that idea officially became something we could hold in our hands.
Turning an idea into a physical product—one that we can now sell and share with the world—is the best feeling in the world. It made every challenge worth it: from getting our labels approved by the FDA, to handling all the legal paperwork, to finding a trustworthy manufacturer who shares our standards for quality. Every step was about making sure we deliver the absolute best product possible.
Now we’re finally here, ready to launch—and we’re proud to play a role in bringing beef tallow back as an American staple
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
Before launching American Tallow, I worked in government and politics. I got involved because I wanted to make a difference—but over time, I realized that real change is nearly impossible in a system bogged down by partisanship and endless back-and-forth. There’s a lot of noise, a lot of talk—but not a lot of meaningful action. I wanted to do something real. Something tangible. Something that could actually improve lives.
That’s when I found a new path through an old tradition: beef tallow.
For thousands of years, tallow was a staple in kitchens and homes around the world—including right here in America. It was trusted, versatile, and nutrient-rich. But by the 1990s, it had all but disappeared—replaced by highly processed, inflammatory seed oils, pushed by misguided health trends and government policy.
Now, tallow is back in the conversation. But there’s still a major gap: it’s hard to find, confusing for new users. That’s why we started American Tallow—not as a trendy product, but as a mission. We believe making America healthy again shouldn’t be a political statement. It should be common sense.

Have you ever had to pivot?
A major pivot in my life and career came recently, after wrapping up work on another political campaign. I was completely burnt out. The political world is intense, hyper-divisive, and often draining and I started to feel disconnected from the reason I got into politics in the first place: to create real, lasting change.
The truth is, real change is hard to come by in today’s political climate. No matter what side you’re on, everything seems filtered through a partisan lens, and the constant division between Americans makes progress feel almost impossible. I reached a point where I had to ask myself: Is there another way? Can I still make an impact just not through government?
That’s when the idea for American Tallow really clicked. I started seeing more conversations around beef tallow—its health benefits, its history, even its sudden return to political debates. And it hit me: this product, something so traditional and practical, could be a vehicle for real change. Not through talking points or policy battles but through action. Through business. Through giving people a better, healthier option they can actually use in their daily lives.
That was the moment I pivoted. I stepped out of politics and into entrepreneurship not because I stopped caring about change, but because I found a better, more direct way to make it happen. I still have aspirations to run for office one day, but before that, I want to prove that real impact can start in the private sector. This is my way of showing that meaningful change doesn’t have to wait for a ballot—it can begin with a jar of beef tallow.
Can you tell us the story behind how you met your business partner?
I met my business partner in first grade, and we’ve been best friends ever since. Our families are practically intertwined—he’s more like a cousin than a friend. For years, we always had a feeling we’d go into business together one day. So when I came to him with this wild idea to start a beef tallow company, he didn’t hesitate. He said, “I’m in.” And from that moment on, we’ve been building American Tallow together—driven by the same vision, shared values, and a lifelong friendship.
