Alright, Viktoria thanks for taking the time to share your stories and insights with us today. Are you happier as a business owner? Do you sometimes think about what it would be like to just have a regular job?
I am extremely happy as a business owner, because it allows me to be fully present for my clients when I’m working, but also as a Mother for my son, which is the most important job I could have. Owning my own business allows me the flexibility to design my life according to what best suits me & my family. Although there are days I pull 14 hours, there are others where I am 100% present with my family, and I design my workflow accordingly. I strive for a great balance between the two, which of course, is sometimes easier said than done!
Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
My name is Viktoria Tabak, and I am the chef & owner of VLT Catering. I am a private chef, and also offer full service catering, complete with bartending & serving staff. I offer weekly individual & family meals, customized for my clients dietary needs & preferences.
I fell in love with cooking at an early age, thanks to my Father’s love of food, and my Grandmother spending many hours in the kitchen with me. Their love of food & family led me to restaurant industry, where I mastered positions in both the front & back of the house:
I studied in Florence, Italy under wonderful chefs, building my foundation & understanding of flavors & fresh product. I returned to the U.S: to sharpen my skills under French direction, increasing my knowledge of international cuisine, and elevating my plating & knife skills.
Unlike working on a kitchen line, being a private chef allows me the opportunity to still interact with my guests, combining my love of cooking with the guest interaction.
I enjoy the organization & details it takes to execute an event seamlessly, and I strive to make my clients lives easier, more enjoyable, and above all, more delicious!
What’s been the best source of new clients for you?
The best source of new clients for me is definitely word-of-mouth. I strive to make each event enjoyable for all guests in attendance at a party, or each meal memorable for a private chef client, in hopes they will share their happiness with those they come across. The larger their circle, the further my business can reach.
Social media is of course key to this as well, because it has the ability to reach not only people we see often & in person, but other family members & acquaintances alike.

My (now) husband Jason & I met in 2007 in Orange County while working in the restaurant industry. Between the two of us, we each had extensive experience serving, bartending, and managing restaurants. This, coupled with my culinary education & experience, made us a perfect team in the private hospitality sector. Although he is now a Firefighter, his flexible schedule still allows him to assist with large events, whether it be behind the bar for a large party, or dropping off catering orders for me. His support & encouragement gave me the springboard I needed to launch my private chef business, and it has been a rewarding experience for our entire family.
