At Edggies, our mission help people to eat more vegetables.
We believe that small, low-effort changes can have a big impact on long-term health, and that’s why we created edggies: a simple, flavor-neutral veggie sprinkle that can be added seamlessly on top of any meal.
This mission is deeply personal to me because I know firsthand what it’s like to be too busy to care for yourself while you’re juggling a demanding corporate career.
I spent years struggling to balance my health with my hectic schedule, often defaulting to convenience over nutrition. It wasn’t that I didn’t want to eat better—I just needed an easier way to do it.
That realization led me to rethink how we approach nutrition. Instead of overhauling diets or relying on willpower, what if we made healthy eating effortless? Inspired by behavioral science (like BJ Fogg’s Tiny Habits), I saw an opportunity to create a product that fits into people’s existing routines, rather than forcing them to change. Edggies was born from this idea: a tool that makes eating veggies second nature.
For me, this mission isn’t just about a product—it’s about a movement. It’s about redefining what “healthy eating” looks like in a world where time is scarce but nutrition matters more than ever. It’s about empowering people to make better choices, not through restriction, but through ease.

I’m Veronica Panzardi, the founder of Edggies, and like many people, I spent years trying to balance a busy career with healthy eating. I worked in investment banking, where long hours and back-to-back meetings meant my meals were often an afterthought. I wanted to eat better, but most “healthy” options either required too much time, didn’t taste great, or just didn’t fit into my life.
That’s what led me to start Edggies—because I realized that healthy eating doesn’t have to be hard. The biggest problem isn’t a lack of nutrition knowledge; it’s the fact that most solutions require people to change their habits completely. And if there’s one thing I’ve learned from behavioral science, it’s that small, effortless changes are the ones that stick.

Beyond the product, I’m proud to be building a brand that challenges the idea that healthy eating has to be difficult. We don’t need more rules or restrictions; we need better tools that work with real life.

Learning and unlearning are both critical parts of growth – can you share a story of a time when you had to unlearn a lesson?
Working in finance, I developed a very rigid version of what productivity looks like (late nights in a office, bloodshot eyes, stress, 10 minute desk salads, etc).
This is the opposite of what I need to be creative and positive key elements of building a brand that seeks to offer balance and self care to people with busy lives.
The past few months since I left finance to build this veggie sprinkles company have been a process of unlearning some of that hustle culture so that I can be an effective entrepreneur. This means diligently planning time for calm and freedom of ideas instead of back to back meetings and actions.

Alright – let’s talk about marketing or sales – do you have any fun stories about a risk you’ve taken or something else exciting on the sales and marketing side?
Our marketing story is not a dramatic one. We’ve been posting on socials every day for 9 months. The result has been the creation of a community and buy-in to our brand. We sometimes go viral, but often we do not and our follower growth has been moderate but steady. It’s a tale of perseverance that has built us many champions across the food business, explained our product to customers, and helped us hone in on the best messages. Sometimes the story is a bit boring, but the result has been incredible.
