We caught up with the brilliant and insightful Tony Ferrari a few weeks ago and have shared our conversation below.
Tony, appreciate you joining us today. Owning a business isn’t always glamorous and so most business owners we’ve connected with have shared that on tough days they sometimes wonder what it would have been like to have just had a regular job instead of all the responsibility of running a business. Have you ever felt that way?
Being a business owner is great! Make your own schedule, flexibility, and working hard for yourself and not a random company. However you are on 24/7 there is never a dull moment. I often think how nice it would be to just clock in make my money and clock out. Once I leave the work place im done with no more responsibility or continued thinking about it. That sometimes sounds really nice.
Tony, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
We have always been in the restaurant business, I dont think that will ever change. It was a natural progression especially since my father is from italy and has also been in the restaurant business most of his life. We love hospitality and taking care of folks.
No one can ever master and or mimic your pure energy or tell the story like we do cause it honest and real. When things like that are forced and made up you can see right through it which is why lots of business fail because its not authentic or a true story. A place of belonging. WE will only be able to tell our story with emotion and thats the difference at our shops, its a reflection of us!

Can you tell us about a time you’ve had to pivot?
this is easy for most of us! COVID. What a crazy time and change and thinking on your feet to survive! We had to shift in order to stay open, we changed shop protocols, added things, and thought in ways we never would have if not forced to.
We started delivery, package deals, and cooking at folks homes which has continued now that things are back to normal. Its fun and another revenue stream for us.
Can you open up about how you funded your business?
This is always the hard part with any business! Finding the capital to bring your dream to life. Especially in food and beverage, its a expensive risky business that most loose their money on. Banks will fund it but with tons of collateral and a heafty downpayment.
For us we did a mix of SBA loans, and debt notes from friends that believed in us! It was not easy and you might have to switch your dream and budget around to make it work then go back and do everything that you wanted to once making better income!
