We were lucky to catch up with Tim Woodard recently and have shared our conversation below.
Alright, Tim thanks for taking the time to share your stories and insights with us today. How did you come up with the idea for your business?
Well, I always knew I wanted to open up my own food services business; however, I always thought it would happen after I retired from my state job with the University of Miss. I had put sixteen years into the state system so I only had 9 more years to retire. Yet retiring after 25 years was not in the stars for me. I figured now was the time to start a small high-quality plate lunch business in Oxford, MS. I knew there was a need, as there were nowhere to get a convenient home-cooked meal in our area. Little Easy Express Lunches was born and the rest is history.


Tim, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Tim Woodard and Little Easy takes pride in offering extremely tasty, affordable, and in high-demand Southern Comfort Food. Whenever possible we use fresh local ingredients. Our food is made from scratch We provide plate lunches catered breakfast, lunches and dinners
How about pivoting – can you share the story of a time you’ve had to pivot?
In April of 2020 Little Easy had to pivot our service offerings to survive. We started delivering homecooked meals to elderly customers, medical offices, and essential workers. We also took the time to reorganize our business model and offerings.

Any advice for growing your clientele? What’s been most effective for you?
Our most effective strategy for growing our business is a high-quality product prepared with love, care and the utmost attention to detail.
