We were lucky to catch up with Tiffany Cohen recently and have shared our conversation below.
Alright, Tiffany thanks for taking the time to share your stories and insights with us today. So, naming is such a challenge. How did you come up with the name of your brand?
The creation of the name FLOR DE LA JARA has an interesting story. Jorge and I wanted to make it something that had a meaningful connection to its origin – but something that was also obviously Spanish. La Jara is the name of the region where our olives are harvested. Flor means flower and there is a flower that grows wildly on the land that is also called la Jara. The leaves from the flower are a bit sticky and leave your hands with a smell of incense. We thought that it would be a great tribute to name our olive oil not only after the flower but the region where our story began.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
FLOR DE LA JARA is a passion project for my husband Jorge and myself. Jorge’s family has been producing olive oil in Spain for three generations, and I’ve always been passionate about food and wellness, partly due to my Jamaican heritage. We wanted to bring our worlds together and share something truly special.
Our olive oil is made using traditional methods from Jorge’s family. We hand-harvest the olives from our family orchard in the La Jara region of Spain. The Mediterranean climate there gives our olives an amazing taste and aroma.
We focus on quality and sustainability, making sure every step—from picking the olives at their peak to cold pressing—preserves their natural goodness. We offer three varieties: Arbequina, Picual, and Cornicabra, each with its own unique flavor.
The oil is bottled in Spain and then shipped to the U.S. We’re excited to share a piece of our heritage and dedication to quality with everyone.

Can you tell us the story behind how you met your business partner?
Jorge and I actually met in the airport in Madrid. We were both leaving Spain and returning home – myself to New York and Jorge to Hong Kong. We spoke for 20 minutes and exchanged contact information. When we landed we continued the conversation – the beginning of a a 1.5 year international long distance relationship which ended in marriage. Since that time we have had many adventures including starting Flor de la Jara.

We’d really appreciate if you could talk to us about how you figured out the manufacturing process.
Flor de la Jara manufactures its own Extra Virgin Olive Oil – our family has been producing extra virgin olive oil for three generations in Spain! We often say that our olive oil is directly “from our trees to your table”. We harvest the olives ourselves on our family land in Montes de Toledo and then transport them to the olive oil mill which was founded by Jorge´s grandfather. The olives are cold pressed and bottled. Flor de la Jara is then shipped and ready to enjoy!
