Alright, Thierry thanks for taking the time to share your stories and insights with us today. What’s the backstory behind how you came up with the idea for your business?
Being a pastry chef I have always described my delicacies as Chichifoofoo in the past 2 decades, which mean beautiful/ above and beyond. Knowing that I never wanted to open a pastry shop but own a business online so I decided to launch chichifoofoo.com 4 years ago
Thierry, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Originally from the French Caribbean island of Guadeloupe (popularly known as ‘The Butterfly’ because of its distinctive shape). I, Thierry ‘Chichifoofoo’ Delourneaux began my pastry journey with an apprenticeship in his hometown. Though my father originally wanted me to become a policeman like him, he supported my choice. I got off to an impressive start, finishing the program in half the allotted time, and went on to pursue a master’s degree in pastry in Paris while honing his skills at Chamarre Pâtisserie. I then crossed the Atlantic to work at the renowned Lenôtre Patisserie in Montreal and steer the opening of two pastry boutiques for Patachou Patisserie in Toronto. Since then,
I have crafted desserts for some of the most prestigious hotel brands in the world, including the Ritz- Carlton, The Greenbrier, The Fairmont, The Waldorf Astoria and the St. Regis. For the past years I have been working as a Corporate Executive Pastry Chef and consultant pastry chef at Thierrydelourneaux.com
Besides that I launched a Chichifoofoo collection on my website where I’m focusing on growing my brand.
Okay – so how did you figure out the manufacturing part? Did you have prior experience?
Being a small business it is very hard to manufacture your products on a small quantity. I did a lot a research to get it started and my friend Terry Carter gave me so many advice being an entrepreneur too
What do you think helped you build your reputation within your market?
I think being a pastry chef my creativity played a big part showcasing my delicious and Chichifoofoo dessert. So when I launched my brand that helped me a little bit with my followers on social media
