We were lucky to catch up with Susanna Maestas recently and have shared our conversation below.

Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
I began working in kitchens at the age of 14. Working in the restaurant and service industry for the last 30 years has been the most profound and prideful experience of my life. I began as a dishwasher, advanced to a line cook, a server, and eventually a general manager, My very first mentor and boss trained me to prepare from scratch, European dishes and taught me how to provide exceptional service to guests. My restaurant serves comforting, from-scratch dishes, and aims to provide impeccable service.
Can you talk to us about how your side-hustle turned into something more.
My side hustle was putting on Pop-Up’s and catering. Everything changed due to CO-VID. It is why I invested in a food truck and eventually purchased a restaurant. Everyone wanted food, but did not want to make it on their own. They really wanted to support small businesses during this time.
What’s been the most effective strategy for growing your clientele?
You have to constantly try different things. Some work. Some do not. We tried starting a running club and doing restaurant lunches. Both were failures. However, certain coupons and our Sunday brunches have been a huge success. Also, continuing to park our food trailer is beneficial.
