We caught up with the brilliant and insightful Sugar Sungkamee a few weeks ago and have shared our conversation below.
Sugar, thanks for taking the time to share your stories with us today What did your parents do right and how has that impacted you in your life and career?
My dad laid down an invaluable foundation for my life and career, particularly through his role as the Chef / Coowner of Jitlada Thai Restaurant since 2006. His dedication and passion for the culinary world were contagious, and he imparted upon me not just recipes, but an entire ethos of running a successful restaurant. From the intricacies of cooking to the complexities of managing staff and pleasing guests, he left no stone unturned in his teachings. One vivid memory that stands out is our trips to the market, where he taught me the art of selecting the freshest produce and the finest ingredients. His guidance didn’t just equip me with skills; it instilled in me a sense of responsibility and determination to carry on his legacy. Even after his passing in 2017, his influence remains a guiding light in my journey. He taught me not only about the culinary world but also about resilience, strength, and the importance of family. His lessons continue to shape me into the strong, capable woman he always believed I could be, ensuring that I carry forward his legacy with pride and dedication.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
I got into the business originally helping my dad run his restaurant. After my dad passed I now help my Aunt. At our restaurant, we don’t just serve food; we offer an experience steeped in culture, authenticity, and love. Our focus on Southern Thai cuisine sets us apart. We’ve honed our craft, perfecting recipes passed down through generations. Each dish tells a story, connecting diners to the vibrant flavors and traditions of Thailand’s south. What truly sets us apart, however, is the passion we infuse into everything we do. From the moment you step through our doors, you’re welcomed into our extended family, where every meal is prepared with care and served with a smile.
One of the things I’m most proud of is seeing our restaurant flourish over the years. From humble beginnings to rubbing shoulders with celebrities, it’s been an incredible journey. But above all, it’s our loyal customers who fuel our passion. Their enthusiasm, support, and energy are what keep us going day after day. So, whether you’re a seasoned foodie or someone looking to explore new culinary delights, I invite you to join us at our table. Experience the warmth of Thai hospitality, the richness of Southern Thai cuisine, and the joy of sharing a meal with loved ones. We can’t wait to welcome you into our family.

How do you keep your team’s morale high?
Managing a team and maintaining high morale is crucial for the success of any business, and I’ve learned a few key pieces of advice along the way. Firstly, it’s essential to cultivate an engaging and fun environment where team members feel motivated and excited to come to work. This can involve team-building activities, celebrating achievements, and fostering a positive company culture. Secondly, it’s important to keep stress levels in check by addressing problems promptly and providing support when needed. Open communication is also vital; keeping the lines of communication open ensures that everyone feels heard and valued. Additionally, fairness is paramount. Treating all team members with respect and fairness builds trust and loyalty within the team. Lastly, it’s crucial to recognize and appreciate the efforts of team members. Praise and compliments not only boost morale but also encourage continued excellence and dedication. By implementing these strategies, you can create a cohesive and motivated team that drives success for the company.

Let’s talk about resilience next – do you have a story you can share with us?
My journey in the restaurant industry exemplifies my unwavering dedication and willingness to roll up my sleeves and do whatever it takes to ensure success. From the moment I stepped foot into our family business, I understood the importance of being hands-on and adaptable. This meant being willing to work every position in the restaurant, whether it’s cooking on the line during busy rushes, bussing tables to ensure smooth service, or staying up late into the night to perfect our signature sauces.
I’ve learned to embrace challenges head-on, whether it’s dealing with equipment malfunctions or unexpected shortages of ingredients. When faced with obstacles, I’m not afraid to get my hands dirty and find solutions. This often involves calling maintenance services, driving to local markets to replenish supplies mid-service, or even personally sourcing the best products from afar to maintain the quality our customers expect.
My willingness to do whatever is needed on a daily basis stems from a deep-rooted passion for our restaurant and a commitment to its success. It’s not just about fulfilling roles but about embodying the spirit of entrepreneurship and dedication to excellence. This journey has taught me the value of hard work, perseverance, and the importance of being fully invested in every aspect of our business. And through it all, I’ve come to realize that success is not just about reaching the destination but embracing the journey and the challenges that come with it.
