Sammy, appreciate you joining us today. Almost all entrepreneurs have had to decide whether to start now or later? There are always pros and cons for waiting and so we’d love to hear what you think about your decision in retrospect. If you could go back in time, would you have started your business sooner, later or at the exact time you started?
Starting my business during the pandemic was either a bold move or a recipe for disaster. Luckily, it was the former. I’m grateful for the challenge, which served as a litmus test for my business model and my sanity. I believe divine guidance from God played a role in my success, but let’s be even more transparent, caffeine and determination were also key players. I wouldn’t change a thing, except maybe the gray hairs I acquired along the way. After a lifetime of hard work, my restaurant is finally up and running, and I’m thrilled with how everything has unfolded. Now, if only I could expand into a bigger space… or a bigger couch for my exhausted self!”
Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
My journey into cooking was kinda of expected, but it’s where my passions for science, engineering, and music converged.
My mother is my main driving force for cooking. Christine Dean, a chef in her own right, was the leading inspiration. I watched her, year after year, cook thousands of meals and share her recipes and show my ciblings and I how to keep the tradition going. My dad, Moses Dean, used to fascinate me with how crispy he could cook his chicken still maintaining moisture and staying crispy and freshfor days at a time.
I was inspired by culinary legends like Jeff Smith on “The Frugal Gourmet”, Martin Yan on “Yan Can Cook”, Julia Child on PBS, and Justin Wilson on “Louisiana Cooking”. Later, Anthony Bourdain’s travels and Alton Brown’s science-driven approach on “Good Eats” further refined my understanding of the kitchen. I also enjoyed exploring the intersection of food and science on shows like “Beekman’s World” and “MythBusters”.
Through trial and error, I’ve developed my own style, blending sweet and savory flavors to create dishes that delight. This journey has taught me the value of perseverance and humility. My recipes are personal, born from experiences and a passion for flavor and prayer!
As a chef, I aim to create a welcoming experience for those new to my cuisine and a satisfying one for those who share my passion. I’m dedicated to refining my craft, driven by a love for creation and a commitment to excellence.
What do you think helped you build your reputation within your market?
At The Singing Chef Cafe, I’m passionate about serving more than just a meal – I’m dedicated to sharing love, care, and consistency in every bite. As Chef and Owner, I believe that food should be a labor of love, crafted with premium ingredients and a passion that’s obvious in every dish.
I like a family style atmosphere, and Anna Harrison is a shining star. As a waitress, she embodies the spirit of our cafe – selfless, loving, and caring. By day, she’s an Algebra One teacher for the Mansfield ISD, and by night, she brings joy and exceptional service to our customers. We’re lucky to have her and her banana pudding!
I refine my recipes bi-annually to ensure optimal flavor and freshness, and my diverse menu showcases my culinary expertise and creativity. As a faith-driven individual, I’m guided by a higher purpose and that’s God. and a commitment to excellence in everything I do.
I am blessed to have a beautiful and smart seven year-old daughter, Scarlett Fox, as my number one fan and my desire to do what I do every day!
I am grateful for her mother, Sarah Burnham for gracing my establishment with her exceptional artistic abilities by painting our 2024 “Best in DFW” award from the Fort Worth Star-Telegram!

Can you share a story from your journey that illustrates your resilience?
As the Chef and Owner of The Singing Chef Cafe, I’m living my dream, but it’s not without its challenges. Every day, I strive to serve more than just a meal – I aim to share love, care, and consistency in every bite. Despite being understaffed and often feeling overworked, I’m driven by my desire to make this locally owned spot a success.
Most days, I work alone, juggling multiple roles – purchasing, restocking, prepping, cooking, serving, taking call-in orders and quality control. Also cleaning…It’s a heavy burden, but with God’s guidance, I persevere. Anna’s help in the evenings is a blessing, and together, we make it work. She is extremely dependable and never has a bad day from what I can tell the last two years.
My daughter, Scarlett Fox, is my biggest motivation. I’m building this legacy for her, hoping it will sustain her and provide a secure future. I dream of her taking over the cafe one day, making it her own, and passing it down to future generations.
Though the journey is tough, I’m driven to provide for Scarlett’s future. I’ll continue to work tirelessly, trusting that God will guide me through the ups and downs. My story is still unfolding, but with determination and faith, I’ll make it a success – not just for myself, but for Scarlett’s future. I’m “BLESSED & HIGHLY FLAVORED”!
