We were lucky to catch up with Randi Dorsey recently and have shared our conversation below.
Randi, looking forward to hearing all of your stories today. What was it like going from idea to execution? Can you share some of the backstory and some of the major steps or milestones?
I’ve enjoyed catering and providing hospitality since 2006. In 2017, I sat down and decided I wanted to do more, to come up with something unique that I could share with my client base. That year, my food truck concept, EFF-N ROLLZ was born. I initially wanted to make food cones, like savory ice cream style cones of food. However, after brainstorming and researching with family we decided that for concerts and festivals, our food needed to be more grab and go. I visited DC one weekend and had a Philly Cheesesteak egg roll at a local establishment. I thought to myself, that’s it! I am going to put every savory and sweet favorite of mine in an egg roll. I spent the next few weeks learning how to roll a perfect egg roll. Then the planning parties began. The family would come over with their ideas and ingredients for fillings. We would laugh, cook and create all day long.
I had always done catering events, however never participated in any festivals or vending opportunities. I decided to set out to my hometown of East Liverpool, Ohio in July of 2017 to have EFF-N ROLLZ be a part of the Jazz and BBQ Fest that year. It was myself, my mother, 2 cousins, a tent and 2 fryers. I drew out a sloppy design of what I wanted my logo to look like, and my cousin who is amazingly gifted at art created the masterpiece we still use today.
The festival ran 2 days, and to say I learned a lot is an understatement. We faced shut down from the health department, running out of product, and at one point having a line around the block because all the other vendors had sold out. This all ended up being a blessing. I was terrified, but we kept going. By the end of that weekend, I had rolled and sold over 240 egg rolls. That’s a lot for a first try in my opinion. It was at that time, I knew this idea was true product.
So each year, we kept coming back. Tent, table, proper refrigeration, hand wash station, and our events continued to be a success. We brought a thing to the area that was unique and everyone was excited about it. The outpouring of love and support from my community and family was overwhelming and the true reason for my success today.
After much hard work and patience, in 2024, we turned that tent and table into a full running food truck, The food truck was personally designed by me, with all the bells and whistles. In 2025, I relocated back to the area outside of my home town and you can see us at your local business parks, parking lots, festivals and events set up and serving our goodies with a smile!

Randi, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
My food and hospitality journey began in 2006 when I catered the food for a friend’s baby shower. It soon went from people asking me to provide a spread for their party, to me making the decision that this could be a lucrative business for me. We now provide personal chef, private chef, event catering, corporate catering, full bar service and waitstaff, as well as our food truck.
What sets my business apart from others is we like to work with you to personally customize your event, from cuisine, to decor, and even signature cocktails and mocktails. We take a more intimate approach to service, offering hospitality and catering to 100 guests or less.

Any insights you can share with us about how you built up your social media presence?
My first step was setting up a website for my businesses. Clients like to have a place to familiarize with you, read your story and base their decision off of how they feel visually and if you inspire them in any way. Social media followed, it is important to build a positive social platform, share your stories, experiences and let them know you are human too. Posting regularly promotes engagement and long term clients.

Do you have any insights you can share related to maintaining high team morale?
When it comes to managing a team, you have to remember this product or service is your baby and you know all the ins and outs that come with it. Be thorough with your expectations of people, make sure they understand and respect the brand without being condescending. If you treat people with respect and set a good example, they will in turn service your product and clients with the same integrity.
