We recently connected with Racheal Felder and have shared our conversation below.
Hi Racheal , thanks for joining us today. We’d love to go back in time and hear the story of how you came up with the name of your brand?
Once I completed the main focus of our menu “Chicken Sandwiches” the name came pretty naturally!
We were driving to my grandparents in Alabama for Thanksgiving and I asked my husband what about “Hissy Chick”, he paused and asked why?! We owned chickens at the moment and I was like they have so much attitude and oh so moody at times lol. Just as I created each sandwich to stand out and be different, Hissy Chick was the PERFECT fit!!!
Racheal , before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Growing up I couldn’t wait to work and earn money. My very first job was at only 14 years young as a hostess at a local restaurant in Tomball, Texas. I learned so much about the fast paced restaurant industry. The good, bad and all in-between. Fast forward to my senior year of high school I started a job with a newly built Sonic as a car hop. I continued with that location for the next 2 years.
In 2011 my parents opened a restaurant in Chatom, Alabama. My husband and I went back and forth from Texas to Alabama to help with that location. In Nov of 2012 we opend a location in Tomball. We learned so much from this location and we struggled alot. This was by far one of the biggest challenges in my life. Unfortunately we closed that restaurant in June of 2014.
My heart loves serving others that’s just what I do. Serving others through food is a passion of mine. I knew for a fact I would do it all over again but on a much smaller scale as a food truck. In 2017 I got back in the industry with a local small business restaurant and I was able to ignite that passion again. January of 2021 I left that position and stayed home working on recipes and a menu. January 2022 Hissy Chick was born. By March we were booking events in a pop up tent serving the BEST Chicken Sandwiches. In July we picked up our food truck and never looked back!!!
Can you open up about how you funded your business?
We started small like really, really small. I had a menu with 3 Chicken Sandwiches, my gourmet cookies and our Hand Squeezed Blue Sparkle Lemonade. I owned a pop up tent, had a commercial flat top grill, a bottle of propane, tables, and we purchased a warmer. It was so much work to load, unload and then serve with a smile at eac of the scheduled events. I constantly reinvested into our business purchasing additional items and created a savings. We had our trailer built and made several payments untill we picked (Black Beauty) her up.
Can you tell us about a time you’ve had to pivot?
I’m certain there are many where I’ve had to pivot in life in general. The challenges of life and business has helped build me into who I am.
A specific time was back in my pop up tent days. I was pulling the trailer home from an event very late at night all by myself. As I approached the entrance of our neighborhood we were stopped by a train. As I’m waiting for the train to pass a man knocks on my window, slightly startled I roll the window down just a tad to hear. “Ma’am, you lost something back there.” Oh no! My heart sank not only is it late at night but I have another event in the morning. As the train ends I pull to the entrance of Mt neighborhood, park and get out to see what exactly is missing. No! Say it isn’t so. The commercial flat grill (which yes was strapped down) is gone! I call my husband and son who were a few miles behind me and unfortunately they were able to locate the drip pan but someone had already grabbed the grill. We’ll remember how I said I had another event the next morning, lol thank goodness for good ol Home Depot and online shopping. So we purchased a black stone or well the brand just under it lol. We had to pivot and simply be thankful we had another option to cook on the next day!
