Hi Pearl , thanks for joining us today. Can you talk to us about a risk you’ve taken – walk us through the story?
I hail from the Philippines, born and raised on a tiny island. Despite my humble beginnings, I harbored grand aspirations such as relocating to Australia, mastering French, or retiring in Bali. Surprisingly, Los Angeles wasn’t initially part of my plan; however, a job offer in a Beverly Hills restaurant altered my course. Choosing to take a leap of faith, I left everything behind in the Philippines to pursue my culinary aspirations in America. Arriving in L.A. solo, with just a suitcase, I faced the unknown without any connections, friends, or family. This risk, though daunting, turned out to be the most significant and rewarding decision I ever made. I firmly believe that “The bigger the risk, the bigger the reward.” Yet, the real enemy isn’t risk; it’s regret. Taking the leap comes with less regret than avoiding it altogether. The choice is clear: risk potential lifelong regret by staying put or take the plunge, gaining valuable life skills even if the journey leads back home.

My name is Pearl, and I proudly serve as both the Head Chef and Co-Owner of Kusaki Restaurant. With an unwavering dedication to culinary excellence, I’ve cultivated a reputation as a premier Private Chef, catering to the discerning palates of business elites and celebrities across Los Angeles. Having undergone rigorous training under esteemed culinary mentors, including a Michelin-starred chef, I’ve immersed myself in the art of Japanese cuisine, particularly specializing in plant-based interpretations. At Kusaki, we distinguish ourselves as a Japanese Plant-based sushi haven, offering a unique Plant-based Omakase experience meticulously crafted with the finest ingredients. Drawing upon my traditional sushi background, I’ve reimagined plant-based ingredients to authentically replicate the flavors of traditional Japanese sushi, sans animal products. Our mission at Kusaki extends beyond culinary innovation; it’s a commitment to ending animal exploitation and fostering a compassionate lifestyle through our culinary offerings.

What do you think helped you build your reputation within your market?
Building a reputation within the culinary world is a delicate blend of passion, consistency, and innovation. From my perspective as both a restaurant owner and chef, I believe several factors contributed to establishing my presence in the market. Firstly, maintaining unwavering quality in every dish served, ensuring that each bite tells a story of dedication and skill. Secondly, fostering strong relationships with suppliers, prioritizing fresh, locally-sourced ingredients whenever possible, which not only enhances the flavors but also resonates with the community. Additionally, embracing creativity and continuously evolving the menu to surprise and delight guests, while still staying true to the restaurant’s identity. Lastly, providing exceptional customer service, creating memorable dining experiences that keep patrons coming back and spreading the word. These elements, combined with a genuine love for the craft, have been instrumental in shaping our reputation as a destination worth experiencing.

Do you have any insights you can share related to maintaining high team morale?
As a Restaurant owner and Head Chef, I always lead from the front. Cooks always like to see their chef come in before them, leave after them, and always work at least as hard, or better yet, harder than them. And they want their chef to be capable of doing anything they’re able to do. Because you’re going through what they’re going through, there’s camaraderie. Rather than instilling anxiety and fear to my staffs, I aim to cultivate a sense of security and inspiration among my team, as true respect is earned through leadership that nurtures and empowers others.
