Alright, Pasang thanks for taking the time to share your stories and insights with us today. How did you come up with the idea for your business?
DGT Tacos really came from a shared dream among all of us partners. We’ve always been in the hospitality business, and food has been at the center of our lives; not just as a career, but as a way to connect with people. For years, we talked about owning a place that reflected our values: something local, authentic, and built around community.
When the opportunity came up to take over this taco shop in Fort Collins, it felt like the perfect fit. We loved the food, we loved the energy, and we saw how much potential there was to make it our own. What motivated us most was the idea of serving the best tacos in town while staying true to what we believe in; sourcing everything locally, cooking from scratch, and keeping it GMO‑free.
For us, it wasn’t just about running a restaurant. It was about creating a space where people could taste the difference that comes from care and quality, and where the community could feel proud of what’s being served. That’s why we decided to buy the restaurant from the previous owner; because we knew we could carry forward something special and make it even more meaningful.
Owning DGT Tacos is more than a business venture; it’s the realization of a long‑held passion. Every taco we serve is a reflection of that journey, and of our commitment to hospitality, authenticity, and community.

We’re the team behind DGT Tacos in Fort Collins, and our journey comes from a lifelong passion for hospitality and food. After years in the industry, we wanted to create something local and authentic, so when the chance came to take over a beloved taco shop, we knew it was the right fit. Our focus is on serving the best tacos in town with locally sourced, GMO‑free ingredients, while building a space that celebrates community and quality. What sets us apart is our commitment to authenticity and care; every taco reflects our values and the pride we take in serving our guests.

We’d love to hear about how you met your business partner.
We actually all met back in high school, and from the very beginning we built a friendship that has lasted through the years. Even as life took us in different directions; college, careers in hospitality, and other ventures; we stayed close and kept talking about our shared dream of one day owning a restaurant together. That bond and trust we built as friends became the foundation for our partnership.

How about pivoting – can you share the story of a time you’ve had to pivot?
After COVID, many small businesses in our community had to close, and while we were fortunate that the previous owner had set the restaurant on a solid path, it was still a struggle to keep a local business going. We realized we couldn’t rely only on in‑house dining, so we pivoted by launching catering services as an additional revenue stream. Our taco bar setup, with fresh tortillas and all the fixings, allowed us to reach new customers and keep the business sustainable. That decision not only helped us survive but also strengthened our connection to the community by finding new ways to share the food we love.
