Nicholas , thanks for taking the time to share your stories with us today One of our favorite things to brainstorm about with friends who’ve built something entrepreneurial is what they would do differently if they were to start over today. Surely, there are things you’ve learned that would allow you to do it over faster, more efficiently. We’d love to hear how you would go about setting things up if you were starting over today, knowing everything that you already know.
If starting over I would do more research on all the regulations involved, both state and federal. Lots of things popped up along the way that I never even thought about. Adding to the start up costs and slowing down the official release date of our first sauces.

Nicholas , love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
Growing hot peppers was a hobby for several years, making sauce and pepper powders for myself. After some discussions with friends the decision was made to turn a hobby into a business, Lickety Nick’s LLC was created in January 2024. Since the creation we’ve brought 5 hot sauces to market, Roasted garlic & Habanero is our top selling sauce. We use fresh ingredients whenever possible and everything is handmade in small batches. Our first sauce made with super hots is “Reapers Thai Tsunami” a unique blend of Carolina reapers, vinegar, fish sauce, garlic, ginger and Thai basil. While the focus is on hot sauce we do have some seasoning blends available also.

We often hear about learning lessons – but just as important is unlearning lessons. Have you ever had to unlearn a lesson?
Just because I like a product and think it’s great the customers might feel otherwise. Had to realize my definition of hot is much different than most customers.

Okay – so how did you figure out the manufacturing part? Did you have prior experience?
Yes, all our products are handmade and small batch produced by us. I already knew how to make hot sauce, but was required to get certified in the production of acidified foods and learn the importance of PH levels and how it affects a product and makes it shelf stable.
