Alright – so today we’ve got the honor of introducing you to Monica Johnson. We think you’ll enjoy our conversation, we’ve shared it below.
Monica , thanks for joining us, excited to have you contributing your stories and insights. We’d love to go back in time and hear the story of how you came up with the name of your brand?
The name “Pallet to Palate” is a fun little play on words. I wanted to come up with a business name that was unique, creative, and semi descriptive of what I do. I use wood pallet boards in most of my charcuterie experiences and the main focus of what I do involves eating a wide variety of delicious charcuterie items, hence the “palate” part.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
Pallet to Palate was launched in August 2020. We exist to create unique charcuterie experiences in some of the coolest spots in San Diego and beyond. We do everything from small, intimate two person picnics on the cliffs at sunset to cocktail hours at weddings. It’s been such a fun business venture and a very unexpected journey so far (in the best way possible!) The heart behind starting this business was to create space for people to gather for no other reason than “just because.” I always say, “you don’t need a reason to celebrate.” We don’t need to wait around for the next big thing happening to plan a fun, special dinner party with your girlfriends. It’s so fun to get those “just because” bookings, but we also absolutely love it when we can be a part of celebrating birthdays, engagements, bridal showers, bachelorette parties, graduations, corporate events, anniversaries, and more. One of my favorite pallets was for a bachelorette party with about a dozen ladies from all over the map. I love getting to introduce new people to some of the most beautiful spots in San Diego and see them embrace the full experience of a fancy customized sit down charcuterie spread.

We’d love to hear the story of how you turned a side-hustle into a something much bigger.
Before I decided to go all in with Pallet to Palate and make it my full time gig I was working a few different jobs. It felt a bit risky to jump all in with such a new business idea, but I was willing to just go for it and take the risk and see where it would take me. And I’m so glad I did! Having more devoted time to focus on one thing and not feeling like my time was being pulled in multiple directions really helped get me going.
About a year before I actually launched Pallet to Palate I was gathering small groups of girlfriends over wine, cheese, charcuterie, and other small bites for no other reason than to celebrate us. These “just because” once a month gatherings became a fun outlet for me to be creative, spontaneous and gather together with my friends. The support and encouragement from those that experienced these “Adventure Dinners” really pushed me to step out and turn my new found hobby into a business. I never envisioned I would be where I am today from where I started. It comes with its challenges for sure, however, the reward has been so great. When you create your own dream job it doesn’t feel like “work”. I absolutely love what I get to do and I’m excited for all of what Pallet to Palate will become!

Can you tell us about a time you’ve had to pivot?
I’ve made a few career pivots in my lifetime. Life is too short to be doing the wrong thing, so sometimes it’s good to switch it up and try something new. Before I started my business I worked at a bakery and nannied for a few years, and before that I taught elementary school for 7 years. I really loved all of the experiences that I’ve had and I wouldn’t be where I am today without them. It’s fun to see how each life experience shapes you and plays a big part in your future adventures. I’m so thankful to be in the position that I am today as a small business owner…living my dream!
