Mike & Jordan, looking forward to hearing all of your stories today. Let’s start with a story that highlights an important way in which your brand diverges from the industry standard.
When we first rolled into Austin, we were pumped to find some crawfish that reminded us of home back in New Orleans. But man, that first boil we went to? They just tossed the crawfish in water and hit it with some Tony’s on top. That’s when we knew the good folks of Austin weren’t gettin’ the real deal. They’d never tasted an authentic Louisiana backyard boil. That moment lit a fire in us, and that’s how Hoodoo Crawfish came to be. We knew we had to bring the real flavor, vibe, and experience to Texas. We’re not just out here servin’ food, we’re building something people remember: southern hospitality, loud laughs, good music, and bold-as-hell flavor. We use 2–3 times the ingredients, hand-pick our crawfish, and wash ‘em clean—three times over. Then we hit that boil with nearly 30 different seasonings and spices. Every pot’s built to bring out big flavor and even bigger smiles. ‘Cause for us, it ain’t just about what’s in the pot, it’s about what’s around it. Family, friends, cold drinks, and good times. That’s what an authentic boil’s all about. We are constantly being asked when are we opening a restaurant or what other items can you offer. We are excited to announce that we are now offering catering year round!! We have always had an award winning Gumbo, as well as Jambalaya, Boiled Shrimp and Crab available year round but wanted to provide more

Mike & Jordan, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
We’ve been boilin’ or goin’ to crawfish boils since we were in diapers – it’s in our blood. This isn’t just a job for us, it’s a way of life. We take pride in bringing folks together for good food, music, and even better company. You’ll find us boilin’ all over bars, breweries, corporate parties, and even weddings. And once your event’s locked in with us, you can go ahead and relax, we’ll handle the rest. We show up, set up, and bring the heat!! No half-steppin’ here. People tell us it’s the event they look forward to every year, and that means the world to us. Truth is, we care too much to throw a mediocre boil. The reason is in the season, and we do it the right way every single time. Because when you’re raised on backyard boils, you learn early that it’s about more than crawfish, it’s about the experience and taking care of the people you love. We are ready year round now so if you have an event or are tired of the same old song and dance at your companies annual snooze fest have them get in touch and we will be sure to bring a party that will be talked about till you hire us for the next one!


Can you open up about a time when you had a really close call with the business?
Man, our first public boil was a near disaster. We had been callin’ all over town, knockin’ on doors, tryin’ to get someone to give us a shot. This was about 10 years ago, when crawfish in Austin wasn’t a thing yet. Finally, the folks at Lonestar Bar in Jonestown gave us the green light. Only problem? We had no credit card machine, and hardly anyone had cash. So what’d we do? We just started passin’ out plates for free—no fuss, just good crawfish and good vibes. And you know what? People loved it. One of those folks was Darby, who was tight with the city of Jonestown. Thanks to that one wild day, we’ve been boilin’ 2,000 Pounds of Crawfish at their Cajun Fest every year since. Funny how a near-mess turned into the start of somethin’ real special.

Lately, we’ve been getting our email game going to build a list of folks we’ve worked with to keep them in the loop. We send out a little somethin’ each month to let y’all know what’s cookin’—whether it’s boil dates, new merch, or just to say hey. Speakin’ of merch, we take a lotta pride in ours. Folks always tell us they love the logo, and we’re right there with ‘em! Matt Sussky, a tattoo artist in Louisiana, put in real time and skill into making sure we got a cool logo that represented our brand and was one that we could continue to build a culture around. If you look closely he even incorporated the Fleur de lis in the logo
