I’m Michelangelo Glionna, the founder of LA LA Lasagna, a mobile culinary experience rooted in the rich traditions of authentic Italian cuisine. My journey began in Bologna, the heart of Italian gastronomy, where I developed a profound love for fresh pasta and traditional recipes passed down through generations. I was fortunate to grow up with a dual influence—my other grandfather hailed from Naples, allowing me to blend the bold, hearty flavors of Neapolitan cuisine with the refined techniques of Bologna.
As a professional chef with extensive experience in the restaurant industry, I’ve always viewed the food truck business as an extension of the culinary world. My mission has been to bring the quality, care, and authenticity of a traditional restaurant to a mobile platform.
