We caught up with the brilliant and insightful Michael Weinstein a few weeks ago and have shared our conversation below.
Michael , looking forward to hearing all of your stories today. Was there a moment in your career that meaningfully altered your trajectory? If so, we’d love to hear the backstory.
One of my defining moments was working at one of Dallas’s top restaurants, Mediterraneo, as a line cook and then getting promoted to Sous Chef. At that moment, I truly felt that I was on the correct path in my chosen career.

Michael , before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
I am Michael Weinstein, a Dallas native who still resides in Dallas. Before I started my own CBD company named Rebel Chef, I was a Chef working in restaurants in Dallas for 24 years, mainly in higher-end restaurants in the area. My formal training was from a French Chef whom I apprenticed with for a year and a half. I got into making CBD products because I am a believer in the benefits that the cannabis plant offers, and I have used my cooking background to assist in making all products. One of the main reasons I started making CBD products was the benefit I noticed my older dog got from taking CBD for his back legs. With this observation, I wanted to help not only dogs but people as well that are looking for alternative medicines.
I currently make caramel candies (cinnamon, coffee, salted), sweet salsas (blueberry lemon, pineapple banana pecan, spiced peach, strawberry mango), tinctures(cherry jubilee, peach melba, strawberry shortcake), topicals(lavender vanilla, mint black pepper, rose vanilla), intimacy serums(peach, strawberry, vanilla), and pet elixirs which come in bacon and peanut butter flavor and have different milligrams for different sized dogs. All of the products I make are my own recipes and formulations. I do not grow my own plants, but I know the sources from which I get CBD. All of my products are third-party lab-tested, and Texas licenses me to be able to make all of my products.

Have you ever had to pivot?
Being a chef for many years in the Dallas restaurant scene and hearing compliments from people who enjoyed their meals was always satisfying. But when I started making my CBD caramels before starting my company and hearing that I was changing people’s lives. This is what made me want to start my CBD company. Plus, seeing how CBD helped my dog Harper with his back legs. When I hear people tell me I have changed their lives, I strive to keep going.
Putting training and knowledge aside, what else do you think really matters in terms of succeeding in your field?
In the field I am in now, I believe that caring about the products that I make and showing concern for the people that purchase my products will lead to success.
