Lynde, thanks for joining us, excited to have you contributing your stories and insights. Naming anything – including a business – is so hard. Right? What’s the story behind how you came up with the name of your brand?
We named our shop after a flower that is native to central Texas. Chocolatiers commonly name their shops after themselves, however it’s not about either one of us individually, this will always be a team effort. We wanted to recognize that this could be something truly special for us, as well as our growing team.
Golden Eye Chocolates’ name is a reflection of our love for nature and greenery, and is just fun to say!
Lynde, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
I’m Lynde Mitchell, the owner of Golden Eye Chocolates and a seasoned chocolatier and graduate of Escoffier Culinary Institute. I met my co-founder and head chocolatier Jess Morrisey during their time at Chocolaterie Tessa, an Austin, Texas chocolate shop that closed down during the pandemic. Between the two of us, we have 11 years of chocolate making experience.
Golden Eye Chocolates uses a variety of European and American chocolate to craft all kinds of confectionary delights with locally sourced flavors and flares. In their Single Origin Collection, they focus on small craft chocolate makers across the US that work directly with cacao farmers for the highest quality chocolate. Each chocolate is meticulously crafted in small batches, allowing for an unparalleled attention to detail that elevates the taste and texture to a level of perfection.
Customers stepping into Golden Eye Chocolates will be greeted by a stunning display of chocolates that range from classic flavors to avant-garde creations. From beautiful bonbons to chocolate barks and spreads, there’s something to satisfy every palate. The shop also features seasonal collections, ensuring that there is always something new to discover.
Can you tell us the story behind how you met your business partner?
I met my co-founder and head chocolatier Jess Morrisey during their time at Chocolaterie Tessa, an Austin, Texas chocolate shop that closed down during the pandemic.
Owner Lynde Mitchell expresses her joy about sharing chocolates with the community, stating, “Jess and I have both been in Austin for over 10 years, and are continually falling in love with this city. It’s a city that small businesses have a chance to thrive in, music is a priority, and good food is a religion. We are excited to open Golden Eye Chocolates and bring our own flair to Austin.”
We’d love to hear a story of resilience from your journey.
We started Golden Eye Chocolates in 2021 in the midst of a pandemic. This was after our last workplace Chocolaterie Tessa sadly closed down because of the pandemic, which resulted in loss of event orders, etc.
We started by creating flavors in a home kitchen and eventually renting a shared kitchen space at Ghostline Kitchens, a commercial kitchen. We originally thought we’d open our retail location in time for Christmas, but construction delays meant we had to wait until the end of January. We’re excited to open up right before the big chocolate holiday, Valentine’s Day!
We will continue to have two locations, the south location serving as their commercial kitchen for pick up only and the north location will be the retail shop with a wide variety of products to browse.
