We were lucky to catch up with Liz McClure recently and have shared our conversation below.
Alright, Liz thanks for taking the time to share your stories and insights with us today. Before we get into specifics, let’s talk about success more generally. What do you think it takes to be successful?
Perseverance. Macarons are finicky little cookies full of pit falls and challenges. Businesses are finicky big things full of pit falls and challenges. The biggest lesson that I have learned is to just keep going. When a macaron batch fails, make another. When a strategy falls flat, try another. Persevering not just in the daily grind but also in the continual process of improvement, learning, and most importantly creativity has helped me build a business.

I’ve always loved baking and eating desserts. Who needs dinner when there’s cake or cookies or even better – macarons!? I dedicated years to perfecting macarons. I’m passionate about creating macarons that look beautiful and taste even better. Everything is handmade from scratch; from the buttercream to lemon curd and caramel. Using only the best ingredients, I strive to create something original at the highest quality of design and flavor. I began Liz McClure Macarons to spread joy! It’s a privilege to bake for so many celebrations and holidays. I love sharing my passion for delicious desserts throughout my community. I grew up surrounded by creative women who used their baking talent to support their communities. They spread so much happiness through their desserts, I was inspired to continue that tradition with macarons. I am most proud of the quality and artistry of my macarons and the smile on the face of my customers after their first bite.
Have you ever had to pivot?
When I began my business I offered a wide array of baked goods – cakes, tarts, cookies. I baked any pastry requested by any customer. After a year of juggling different processes and the insanity with keeping all those orders straight, I pivoted to focus exclusively on macarons. Macarons are my passion. I love to push the boundary of possible with their design and flavor. Focusing solely on macarons allowed me to grow my volume, control my cost, and put my very best product forward. I optimized my kitchen, my time, and business processes to deliver a unique macaron.
Can you open up about how you funded your business?
I started Liz McClure Macarons with no initial investment and working exclusively out of my home kitchen. First, I gave cookies, cakes, and macarons to friends and family for their events. Soon, they asked for more to give to others. I was happy to bake whatever they requested. Before long, I was taking orders for desserts from people I didn’t know. To grow, I focused on keeping cost low and trying to do as much of the business work myself. I am an artist, so I did my own website, photography, and social media.
