We were lucky to catch up with Lindsey Sozio recently and have shared our conversation below.
Lindsey, thanks for joining us, excited to have you contributing your stories and insights. How did you come up with the idea for your business?
I believed there could be a different approach to coffee. With life moving at such a fast pace, I was looking to create a shift away from the hectic quick-serve culture of coffee to slowing down and making coffee an integral part of a wellness-inspired daily routine. By focusing on the highest quality standards and clean, healthy coffees roasted for balance, my team developed a luxurious line of wellness-oriented coffees with my own daily routine in mind. I like to wake early (when my household is quiet), make coffee, and set intentions and plans for the day ahead. It’s a daily ritual that puts me in the right mindset to be productive, focused, and feel like I’m making the most of each day.
In my journey with coffee, I’ve found that many brands or roasters produce coffees that are too strong, heavily acidic, bitter, or even burnt tasting. In developing the idea for Lavender Coffee Boutique, I wanted to source coffees that offer a sense of calm and subtle increase in energy and focus. I was also looking for clean coffees with a gentle acidity so they are easier on the stomach, smooth tasting, don’t give you the over-caffeinated, jittery feeling, and offer additional health benefits,
We’ve developed a low and slow roasting method that results in an indulgent taste and wellness experience. Our specialty coffees are sustainably sourced and offer a softer tasting profile. We are dedicated to intentionality and to finding calm moments at any time of day.
Lindsey, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
Can you tell our readers about yourself, your background, and how you got into your industry/business/craft?
I’ve had a bit of a non-linear journey to where I am today, but it’s all connected by a passion for creating experiences that elevate people’s everyday lives. I began my career in the world of advertising and marketing, where I had the opportunity to work on several consumer packaged goods (CPG) brands—many of which were focused on female audiences. This gave me a strong understanding of brand storytelling, consumer behavior, and how to craft products and messages that truly resonate with people.
After having children, I felt a shift in what mattered most to me. I transitioned from marketing to interior design, driven by my desire to create spaces that were not only beautiful but also functional and comfortable. I launched a small interior design business, and I found that my approach to design was rooted in creating timeless, enduring spaces that make people feel grounded and at ease. That design philosophy is something I carry into every part of my work today.
How did you transition into the coffee and wellness industry?
Lavender Coffee Boutique is a bit of a love story between my own daily routine and a desire to help others find peace in their own. My morning ritual, which involved a comforting cup of coffee or tea, was a grounding moment in my day—one of intentionality and calm before the busyness of life took over. I realized that this small act of self-care, this “pause,” was something I wanted to share with others. The idea behind Lavender Coffee Boutique was born from that desire to help people slow down, embrace mindfulness, and connect with themselves through their coffee and tea rituals.
What makes Lavender Coffee Boutique different from others in the coffee and wellness space?
What sets us apart is our commitment to creating a holistic experience that integrates wellness, mindfulness, and high-quality coffee. At Lavender Coffee Boutique, we believe in more than just serving a cup of coffee—we aim to help our customers build a moment of peace and reflection into their day. From the carefully selected beans we use, which are roasted to be low-acid and more health-forward, to the way we craft our drinks, we prioritize wellness in everything we do. Our coffee is not just a morning pick-me-up; it’s an opportunity to reset and recharge.
In our café, we craft all of our own syrups using fresh, innovative ingredients. We’ve intentionally reduced sugar and eliminated preservatives, ensuring that everything we serve is as nourishing as it is delicious. We also offer a variety of wellness products that complement the mindful approach we take to our coffee and tea offerings.
What problems do you solve for your clients?
In today’s fast-paced world, many people are looking for ways to slow down, take a breath, and be present. We solve the problem of burnout and mindlessness by offering a space where people can come to slow down, connect with themselves, and be intentional about their well-being. Whether it’s through our carefully curated, low-acid coffee blends, our hand-crafted syrups, or our soothing space that encourages reflection, we aim to create an experience that promotes wellness from the inside out.
Our clients come to us because they want more than just caffeine—they want a moment of pause in their day. They’re looking for coffee that’s not only delicious but also aligns with their values of health, mindfulness, and quality. Lavender Coffee Boutique is a space where they can indulge in something that nourishes both their body and soul.
What are you most proud of?
I’m incredibly proud of the community we’ve cultivated at Lavender Coffee Boutique. We’ve created a space where like-minded individuals can come together and connect, whether they’re simply enjoying a cup of coffee or engaging in deeper conversations about wellness, gratitude, and mindfulness. The fact that our customers return not only for the quality of our products but also for the atmosphere we’ve created is something I cherish deeply.
Additionally, I’m proud of the care and attention to detail we put into every aspect of our business. From the quality of the coffee we serve to the interior design of our space, we don’t cut corners. Every decision is made with intention, and that shows in the products we offer and the experience we provide.

We’d really appreciate if you could talk to us about how you figured out the manufacturing process.
At Lavender Coffee Boutique, we roast our own coffee beans. Initially, we developed a relationship with a local roaster to help source and create the flavor profile for our coffees. However, 18 months ago, we had an opportunity to begin sourcing and roasting our own coffees and control the process from farm to cup, which was ultimately our goal. We believe that it’s important to invest in premium coffee beans, sustainably sourced, from small farm holders across the globe. We view these farmers as partners, and we’re delighted to support them and to showcase their specialty coffees.
Our award-winning head roaster has an incredible depth of roasting knowledge, experience and palette. We consider our roasters to be artists, experts at coaxing the finest characteristics from each green coffee bean. We’ve established a ‘low and slow’ method for each small batch roast. This means we roast our specialty beans at a lower temperature and take more time to develop the flavor profile. The result is a lower acid content and balanced aroma, body, and flavor. Our coffees are healthier and gentle on the stomach while maintaining a rich taste in each cup.
Our manufacturing process is not overly complicated, but we’ve learned some lessons along the way in regard to sourcing and packaging. With sourcing our beans, we’ve learned that it’s best to purchase high quality green beans in smaller quantities to ensure that we offer only the freshest coffees. This is a process that takes time tasting and continual evaluation of samples we receive from farms before placing an order. We’ve also had to manage our packaging process, meaning we’ve worked with talented designers to cultivate a brand identity and packaging around the idea of calm, mindfulness and intentionality. Since we are still a young business it’s meant choosing one direction and hoping it stands apart and attracts the clientele we desire. We’ve had to make small adjustments along the way, but it’s a continual pattern of learning and growth.
How’d you build such a strong reputation within your market?
At Lavender Coffee Boutique, building a strong reputation within our market has been rooted in several key factors that resonate deeply with our customers. First and foremost, we’ve always prioritized delivering the best tasting coffee and unique, innovative drinks that are health-forward. As a brick-and-mortar coffee shop, we knew that our reputation relied heavily on creating a memorable experience for each customer who walked through our doors. We focused on providing exceptional products and service every day, knowing that returning customers and positive word-of-mouth were essential to our growth.
Our dedication to quality is a core value that extends beyond just the taste of our coffee. We’ve built a reputation for being a place where customers can count on consistency and excellence—whether it’s the meticulously crafted drinks or the warm and inviting atmosphere. This commitment to perfection has led to a loyal customer base that keeps coming back, and their word-of-mouth referrals have been instrumental in our growth.
When customers outside of Denver started asking how they could enjoy our specialty coffee, we listened. This demand led us to expand beyond our brick-and-mortar location by offering nationwide shipping through our website. It became clear that our carefully roasted, low acid beans, which weren’t readily available elsewhere, were something people wanted, and we made it easy for them to access these high-quality beans from anywhere in the country.
Another important aspect that helped build our reputation is our responsiveness to customer concerns. For example, when customers began inquiring about mold in coffee beans, we took immediate action. We had our beans tested and certified mold-free, a move that helped build trust with our customers and showed that we take their concerns seriously. By being transparent and proactive in addressing consumer needs, we strengthened our reputation as a brand that genuinely cares about quality and customer satisfaction.
Ultimately, it’s a combination of exceptional products, customer-centric service, and a commitment to continuously listening and responding to our customers’ needs that has helped Lavender Coffee Boutique build a strong and respected reputation in the marketplace.
