We were lucky to catch up with Katie Vega recently and have shared our conversation below.
Katie, thanks for taking the time to share your stories with us today So let’s jump to your mission – what’s the backstory behind how you developed the mission that drives your brand?
In 2018 I decided to take something I’ve always loved doing with my gram and family in Syracuse NY as a young girl which was making biscuits. From there came ‘The biscuit lady’s bakehouse’ from what started off very small only at local farmers markets to only a few years in a full walk-in bakehouse! A strange and unusual bakehouse for all the weirDOUGHS who were outcasted, we specialize in biscuits but bake all sorts of fun spooky goodies year round for the kids who don’t want to really grow up. I want to reclaim what the word ‘weird’ means. Take away it’s negative connotation and create a safe space for all us weirDOUGHS. Because let’s be honest. We’re all a little weird.
As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
I grew up always working in diners and restaurants. I got my pastry arts degree while I was still in high school. Moved down here to Florida in 2005 and went to culinary school. I did hair for a little while between but baking and being a chef was always my true passion and what I wanted to do. We offer all sorts of bake goods, from our infamous biscuits and big effin cookies which is our sister company, too our banana pudding, mile high cakes, cereal killer bars, and much much more! We pride ourselves with our quality for each and every customer and order. We want every person who walks in our door or orders with us to feel like a apart of the creation and family. Again, we’re all a little weird. With our fun and spooky atmosphere you can’t help but feel like a kid on Halloween when you walk in. There aren’t many places in south Florida with traditional biscuits and we’re happy to give you your biscuit fix!
Can you tell us about a time you’ve had to pivot?
When I first started my business I was honestly a little worried about how I presented myself and my business. I was scared to show off my ‘weird’. I’m a very eccentric, very tattooed individual with colorful hair. Not all but some may think that’s “unprofessional” and I wanted to be taken seriously in my industry. I’ve always been weird and liked horror, and Halloween but when I first started I kept it very traditional, very “farmhouse chic”. Which just isn’t who I am. With opening my store front which obviously as the owner Will become almost my second home. I want it to be a comfortable and fun place to spend my time not only working but with my family. We take inspiration from all my favorite horror and cult classic 80’s / 90’s movies. Our decor is now gothic. Or what I like to call what happens when the weirdo goth kid grows up. This was a very big change for not only us but our customers As well. we all were going to have to adapt and we’ve been more than lucky to have everyone be accepting of our new look and change when opening the bakehouse. We appreciate every single one of our customers who have stuck with us through all the changes we’ve made and have kept us going. We are the weirDOUGHS. Also we spell weirdo weriDOUGH because our weirdness comes through with our baking creations the unconventional, the strange and unusual.

We are very active on Instagram, always posting behind the scenes of what goes on to make our customer feel included in the process. I try to always respond to each and every message/comment I get. And work with our customers and take in their feedback. We’re so involved with instagram we also have a separate page for our life sized Trex head, Tiny, our 12ft skeleton Chunk and our little 3ft gremlin Tank for their daily trouble making at the bakehouse! Which may seem weird but they’re also apart of the strange little family.
