We recently connected with Joseph Collins and have shared our conversation below.
Joseph, looking forward to hearing all of your stories today. What was it like going from idea to execution? Can you share some of the backstory and some of the major steps or milestones?
After finishing french culinary school in 2011 and working a few jobs on and off. We started in 2012 in memphis, tn but had to stop due to some life issues. After regrouping and doing private chef gigs and traveling for a few years on the road managing Rap artist Project Pat and also being his private chef. I am back home off the road to be with my kids more and We started Collins Family Food n BBQ again in 2017. From there we only had a meduim size bbq grill trailer and started selling smoked turkey legs on the corner in the Raleigh area of memphis, rain sleet , snow, building business and clients in the area. pressing through hard times, crime, slow business days. We kept cooking and building until soon we had lines in the parking lot and people driving from all over to try our famous turkey legs. Fast forward to 2019 we manage to build a food truck and as we opened up at the end of 2019 COVID hit and the worst year ever to date 2020 came and almost closed us down and slowed everything down. but we continued push and keep building and going out to sell and in May 2022 God told me it was time to move to a new place and we landed here in villa rica GA.

Hello I am Joseph Collins a French trained chef ,piano musician, song writer and music producer from Memphis,tn
I’ve been cooking since a kid, watching my mom bake desserts and my dad farm, hunt and cook his kill, with my mom also being a singer and dad a musician, I guess I got it all on both sides.
Problems I solve for my clients is providing great food for the soul and being even a listening ear and a person of peace for them. I truly Love serving people and making peoples days n life better.
What sets me apart is I care about every part of other people and I take pride in serving other people. I cook out of pure love, everytime I do it. I Let God guide me always
Im Proud of the Man God helped me to become as of today and I’m very proud of my Family ,I call them the WolfPack. And I want people to know that we are here to serve the best food and service available. and help and serve our community as well
Do you have any insights you can share related to maintaining high team morale?
as a leader you have to always keep yourself in the seat of your team and never get too big to do the same task you are require them to do or be.Always speak as We because there is no I in Team. Give respect to get Respect. and operate in love. Love heals n can heal the world.
Learning and unlearning are both critical parts of growth – can you share a story of a time when you had to unlearn a lesson?
I had to unlearn speaking bad and negative words over and about myself and over things I wanted to prosper in my world.
the back story is most people grow up hearing and learning the wrong way to talk , think, speak, and listen. So we do what we are taught growing up, good or bad. And then there’s a time when you can make a choice to be what you know or have seen, or learn new and better and be that. my words were not producing fruit, and there I was complaining about my harvest when I created it with my own negative words. God has now taught me thru faith that our words create our universe, and only speak what you desire, don’t speak the problem speak the solution. and Let the word of God reside in your heart because out of the mouth speaks the hearts abundance.
