We were lucky to catch up with Jessica Woods recently and have shared our conversation below.
Hi Jessica, thanks for joining us today. Naming anything – including a business – is so hard. Right? What’s the story behind how you came up with the name of your brand?
Wild Rind Cheese + Provisions
Wild rind cheeses (sometimes called natural rinds) emerge from what nature provides. Whatever is in the environment grows on the cheese. Sounding rather laissez-faire, wild rinds are anything but and these wheels need special attention to ensure that their rind matures properly.
At Wild Rind Cheese + Provisions, we embrace the delicate balance between nature’s whim and the skilled hands that guide it. Just as wild rind cheeses develop their unique character from the environment around them, our business thrives by staying rooted in place, community, and tradition while giving each element the thoughtful care it deserves.
We source cheeses and wines that celebrate terroir—the influence of soil, air, and flora—and partner with makers who understand that even the wildest ingredients needs attention, patience, and expertise. In our business, we reflect this philosophy by curating provisions that feel spontaneous, yet intentionally chosen. From cave-aged wheels with earthy crusts to handpicked accompaniments, each product tells a story of place and process.
Much like a wild rind that emerges from its environment yet must be tended with care, we believe in letting the local spirit shape our offerings—while never losing sight of quality, curiosity, and care.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
Wild Rind Cheese + Provisions really started from a simple love of cheese and a realization that Las Vegas was missing curated, elevated experiences that centered around cheese and wine. What began as making cheese boards for friends and family has grown into something far bigger than I ever imagined. I often joke that it was a hobby that got completely out of control, in the best way possible.
Many people are surprised to learn that my background isn’t in food, hospitality, or events. I actually spent over 20 years as a dental hygienist and was working for a Fortune 150 company when this all started. That experience not only shaped my professionalism, but also gave me the business foundation and confidence to build something of my own. Shifting into a completely different industry was definitely a challenge, but those core skills like attention to detail, communication, leadership, helped me navigate it and persevere.
Today, Wild Rind Cheese + Provisions offers full-service cheese and wine experiences, from custom grazing tables and platters to interactive tastings, educational events, and brand activations. We focus on creating bespoke, memorable moments that are rooted in craftsmanship, storytelling, and exceptional hospitality. Whether someone is throwing a luxury wedding, hosting a nonprofit fundraiser, or just wants to elevate a dinner party, we tailor everything to fit their needs, style, and budget, without ever compromising on quality.
One of the things I’m most proud of is the team we’ve built. We all come from different industries, but we share a deep appreciation for artisan food, beautifully curated experiences, and making people feel special. Our strength is in that diversity and in the relationships we’ve cultivated, especially with other small businesses and local nonprofits here in Las Vegas. We love being part of this community, and we’re passionate about amplifying other brands and causes alongside ours.

While there are plenty of incredible cheese and charcuterie businesses in Las Vegas, what’s helped us build our reputation at Wild Rind Cheese + Provisions is our unwavering commitment to the craft. We’re not just selling cheese, we’re deeply invested in it. That means constantly educating ourselves, our team, and our guests. Whether it’s through formal training, certifications, or traveling the world to learn directly from producers, we believe in life-long learning through personal experience.
Our offerings are inspired by what we discover- flavors, techniques, and traditions – woven into a curated experience that feels both elevated and personal. And we don’t just stop at there. From immersive tastings to first-class activations that surprise and delight, we aim to create memorable moments that connect people to the story behind what they’re enjoying.
That blend of passion, knowledge, and intentional hospitality is what sets us apart and keeps our community coming back for more.

Where do you think you get most of your clients from?
Without a doubt, our best source of new clients has been word-of-mouth from guests who’ve experienced our hospitality firsthand. When someone attends an event where we’re part of the experience, whether it’s an intimate gathering or a large celebration, they get to see what sets Wild Rind Cheese + Provisions apart. It’s something that’s hard to capture in a photo or on a website. The energy, the attention to detail, and the way we take the stress off the host while still delivering a polished, high-end experience.
We’re intentional about making every event feel special, no matter the budget. That approach resonates, and more often than not, guests leave not only impressed, but eager to bring us into their own future events. That organic buzz has been the most powerful and authentic driver of our growth.
