We recently connected with Javier Ramirez and have shared our conversation below.
Javier, appreciate you joining us today. We’d love to go back in time and hear the story of how you came up with the name of your brand?
Our pizzas are naturally leavened and our wines are natural, so the word was almost too obvious for us to use. Adding the Spanish feminine article in front, which is grammatically incorrect but feels so perfect, was the magic touch.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
Javier Ramirez and Andreina Matos created La Natural in their backyard. While co-founding and running some of Miami’s most award winning restaurants such as Alter, Palmar and Bachour they were hosting friend and family for sourdough pizzas and natural wines “al fresco” in the Miami, Florida home. Javier made the pizzas in a wood burning oven, a dough recipe he developed over the years and Andreina poured natural wines, mostly American.
Naturally, this became the seed for their next restaurant: La Natural. A common vision for great taste with landlords MVW Partners led them to choose Little River for the location, where despite being off the beaten path the restaurant has gathered a significant following with the Miami crowd. Javier’s pizzas and Andreina’s wine selection are complimented by a plates section created for the restaurant by New York City chef Diego Moya.
The space, designed by Andreina, who also designed all their previous restaurants and can be described as a”mediterranean house” , with a roll up door helping make the entire restaurant one big outdoor space cooled by hang ceiling fans. An island in the middle of the restaurant will serve as the beverage and service station. The playlist is funky alternative with hints of African beats and reggae.
Can you talk to us about your experience with selling businesses?
2 of the 4 restaurants we have started in Miami we have sold: Alter and Bachour. It is very important to always be in tune with your values and those of the business, and if there is ever a disconnect due to the business being taken into a different direction, it may be time to move on. Sometimes peace of mind and integrity are worth more than and potential financial benefit.
Can you tell us about what’s worked well for you in terms of growing your clientele?
Have always been a believer in that the greatest form of marketing is to have a great product. Great products and services sell themselves and word of mouth these days spreads like wildfire.
