Alright – so today we’ve got the honor of introducing you to Hilary & Mark Lee. We think you’ll enjoy our conversation, we’ve shared it below.
Hilary & Mark, thanks for joining us, excited to have you contributing your stories and insights. What’s the backstory behind how you came up with the idea for your business?

Something was off kilter. Deep inside there was a gnawing feeling that something wasn’t quite right, that neither of us was really living a life that was quite enough ‘ourselves’ to feel truly fulfilled.
Instead of looking outwards for solutions to quell the unease – we moved our focus inwards, somehow knowing that the most important – if not all – the answers lay within.
The Sundial came about through a rapidly dawning need to feel more connection with the work we all put so much energy into. To start living in a way that inspired and amplified rather than suppressed our personalities, our passions, our idiosyncrasies and our skills.
Mark was a partner in a wine business, not unhappy exactly but he certainly had many aspects of his personality that were not being utilised or expressed. He has this huge energy and is one of those people who is exceptional at everything they do. He is an amazing chef, but also loves to make sure people are having a great time. One of his little know passions and talents is DJ’ing; a DJ at the original Liquid Room in Bussorah Street in the 90s, he is finely attuned into reading the mood of the room, all of which helps when running an outfit where arguably people skills are equally as important as cooking skills.
For myself I had been working in a decades-long career in brand strategy and human insights which had sent me around the globe and presented my family with a seemingly wonderful life, yet I was always on a plane or stressing about some absurdity or other, and did not have enough time with my then young sons, who were obviously needing more hands on time from me. Importantly, the internal and external environments were also shifting. The values and long term vision of the brands I was helping my clients grow were increasingly out of alignment with the pressing human and ecological challenges that we are all facing.
Meanwhile , it seemed, as the years went by, that more of my limited energy was being sucked into internal office politics rather than useful strategic work. I was an intuitive and big picture problem solver and creator, but I wasn’t solving real big picture problems nor was I creating much that brought even a small sense of joy or usefulness, not to myself, my family nor to the wider world.
As Mark and I both hurtled towards our second lives, we decided we wanted to create a project that would be inspiring and energising to ourselves, have some useful application in the world – at least in some form – and that would see us more one ted to ourselves and to nature, present for our children; conscious that if were going to create this new life that at 50 something we probably needed to get on with it and give it a go, even if we crashed and burned.

Hilary & Mark, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
The Sundial is a grounded in the notion that we all have a true north, a unique self that if nurtured and allowed to thrive, will contribute most usefully to our own lives and to society. It is a way of life that sits at the intersection of philosophy, science, spirituality and creativity.
As whole human beings most of us are only using a small fraction of our potential, as we plod like automatons through life. Much of our thought and behaviour is influenced by patterns ingrained in us long before we were born, and systems that are often designed not to nurture, but to average us out and kill the uniqueness of our spirits, whilst attempting to squash us all onto a linear, grey, narrow and competitive path that claims to reveal the ultimate summit, but which disconnects us from the beauty and depth of the deep rivers running in, under and around us, and the true nature of the flow of life that as humans we are all an intrinsic part of.
In literal terms, The Sundial navigates to true north using shadow as well as natural light. In metaphorical terms, The Sundial is an amplification of our whole selves – a space to navigate to who we really are.
In specific terms we run a the Sundial Private Wine Kitchen and Sundial Studios – an Intuitive Creative Studio to explore Ideas for Evolution and to expand ourselves.
At The Sundial Private Wine Kitchen overlooking the water at Keppel Bay, we host convivial private dining lunches or dinners, focused on hearty gastronomy sourced from top quality ingredients, and ethically raised animals, as well minimal intervention boutique producer wines. The kitchen is inspired by Mark’s love of unfussy yet top quality perfectly cooked food, sunshine, blue sky, fresh produce and luscious vines, and of long tables of laughter, conversation and friendship.
Mark’s passion for produce and cooking was ignited when we were living in France over 20 years ago, and has expanded and blossomed over the years via experimentation and refinement in New York, London and Singapore.
At newly launched Sundial Studios, at the charming Phoenix Park flooded with light and surrounded by greenery, we are inspired and borne out of Hilary’s own intuitive and creative expansion, her decades of work observing human behaviour, and her own art practice.
Offering original art, creative classes, workshops for creativity and intuition building, and innovation and ideas for evolution for brands and businesses.
In everything we do we aim to feel aligned with our own energy, so our customers and clients can feel more aligned with theirs.
It takes a mammoth amount of self belief and work, but when we are grounded in and trust our abilities and our intuition, the rewards are happy smiling customers, a more ethical and sustainable F&B industry, more connected, creative people, brands and businesses making more whole brain decisions for themselves and for the planet, then it’s all worth it!
