Guy, looking forward to hearing all of your stories today. Often outsiders look at a successful business and think it became a success overnight. Even media and especially movies love to gloss over nitty, gritty details that went into that middle phase of your business – after you started but before you got to where you are today. In our experience, overnight success is usually the result of years of hard work laying the foundation for success, but unfortunately, it’s exactly this part of the story that most of the media ignores. Can you talk to us about your scaling up story – what are some of the nitty, gritty details folks should know about?
I started Pasta di Guy as a small food truck in 2019, serving homemade Italian pasta dishes on the streets of Tampa Bay. With a passion for culinary and a commitment to quality ingredients, we started to gain more followers.
One of the key factors that set Pasta di Guy apart from the competition was its unwavering dedication and listening to customer feedback. By actively seeking out and incorporating suggestions and criticisms from customers, Pasta di Guy was able to continually improve and refine its menu offerings, service quality, and overall customer experience.
Recognizing the potential for growth, I decided to transfer Pasta di Guy from a food truck to our first brick and mortar on summer 2020. This move allowed Pasta di Guy to reach a wider audience and bring its pasta creations to more customers.
today, Pasta di Guy have 3 locations (2 in Tampa bay and one in Fort Wayne IN). and we just opened few weeks ago the brand to franchise. Meaning qualified candidates would be able own Pasta di Guy location/s across the nation with our training, recipes and methods. for more information and inquiries about it you can read in our website.
My goal is to that Pasta di Guy will become Italian eatery of choice for all American families

Guy, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
I am Guy Carmeli the chef and founder of Pasta di Guy. I graduated from Le Cordon Bleu culinary academy in Europe. I worked in different restaurants around Europe including Michelin star restaurants in the UK.
In 2019 I opened Pasta di Guy as a Food truck and in 2020,the first Pasta di Guy brick and mortar opened.
Pasta di Guy is a fast casual Italian themed eatery. We specialize in made from scratch pasta dishes, each made to order using only the freshest ingredients. The menu includes fresh pasta, sauces, salads, sandwiches, and desserts. We offer a “create your own” pasta bowl, with a wide variety of sauces and toppings so the pastaibilities are endless!

Have you ever had to pivot?
I started my adult career in Computer Science. I originally started college in computers and was working in an office setting. One day I just woke up and decided to make a change and go with my passion. Growing up I have always had a passion for food and been an entrepreneur at heart. From a very young age, I can remember sneaking into kitchens to watch the chefs cooking.
When I finally made the change, I started working in an Italian restaurant. It was challenging yet fulfilling at the same time. I worked extremely hard to prove my skills in the kitchen, and eventually became sous chef after only a few weeks. I was always determined to reach my goals and didn’t stop there. I knew one day that I would want to own a restaurant of my own. I continued my journey studying culinary arts at the prestigious Le Cordon Bleu in Europe. I received the highest level of academic excellence and worked in Michelin star restaurants in the UK.

Any thoughts, advice, or strategies you can share for fostering brand loyalty?
Rewards program, email marketing, SEO and social media are all very important when keeping in touch with clients and remaining relevant. My background in computers has been a great asset when owning a growing business.
We also participate in local charities for schools and build relationships with the community and other businesses.
