We caught up with the brilliant and insightful Geoff Cole a few weeks ago and have shared our conversation below.
Hi Geoff, thanks for joining us today. How did you come up with the idea for your business?
I was awarded a contract feeded detainees at the boarder and needed a kitchen to produce the meals for my Admirals Experience company. In the process, I was able to secure a great deal on a kitchen space in Gaslamp which I personal knew the owners that made things even easier. My main focus was to utilize the kitchen during the day to manufacture the meals that were being delivered daily. However, I wanted to utilize the liquor license and have a place that myself and others like myself would hang out and have a good time. I didn’t want to focus on the kitchen, so I figured I will sub it out to upcoming chefs that would love the opportunity to have their own restaurant in Gaslamp without putting any capital up. Now we book Chefs so they can showcase their talent and the lounge turns into a nightlife activity on Friday and Saturday nights with a Saturday and Sunday funday Brunches.

Geoff, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
I’ve been cooking professionally for over 20yrs. Serving 13yrs in the Navy gave me a lot of discipline to control myself in business task. I’ve leaned that I’m great at generating revenue on a service based business. My business started growing because we solve problems that the government needs help with. Feeding a large amount of people with short time notice. My proudest moments are seeing people under myself grow and creating opportune for the community that my 3 boys have the opportunity witness grow. My kids have the choice of taking over one of my companies, or going to college and create their own path.

How did you put together the initial capital you needed to start your business?
Looking for money for start ups are not easy. The best way is to start small and utilize friends and family to get you going. Then use your funds to grow little at a time.
Can you tell us about what’s worked well for you in terms of growing your clientele?
Hiring someone to take care of the small items, so you can focus on the sale. If you are doing everything, you may miss out on a sale because you are too busy working.
