Fernando , looking forward to hearing all of your stories today. We’d love to hear the backstory behind a risk you’ve taken – whether big or small, walk us through what it was like and how it ultimately turned out.
At the beginning of the pandemic I saw myself unemployed and moved from Santa Fe to Colorado Springs to open my business.
Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
My name is Fernando Trancoso and I own TEPEX food truck in Colorado Springs. We specialize in central Mexican cuisine with a big focus on tacos. Staying true to the recipes and traditions but using techniques from all over the world and presentation that speaks about my years in Haute Cuisine restaurants. We work hard in flavor development and how to incorporate New and modern techniques to our food.
I’ve always been really passionate about food, wine and service and I believe that food is an act of love.
What do you find most rewarding about being a creative?
I enjoyed every day working for some incredible Chefs and I never had the chance to jump in the line and cook. This new beginning gave me the opportunity to live my dream. I love when I get an idea and I get in the kitchen and put those ideas on plates. Creating, painting a time in my life with food. Making people smile through delicious flavors.
What do you think is the goal or mission that drives your creative journey?
My goal is of course someday have my own restaurant where I can showcase my food. I made it a personal mission to rescue indigenous Mexican recipes and cooking techniques.
