Hi Fernando, thanks for joining us today. So, let’s start with trends – what are some of the largest or more impactful trends you are seeing in the industry?

Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers
Grew up in the restaurant industry. When it comes to food, I put no limitations on myself. Customer service has always been priority.
Creating new innovative dishes. Groups of 20-500 + we make it happen.
How about pivoting – can you share the story of a time you’ve had to pivot?
Covid took a toll on a lot of small businesses. We had to think outside the box and adapt to the situation. After support of friends and family and community, we were able to adapt to the restrictions and thrive during Covid! Three trailers and a now a brick and mortar, we are still here and always looking for ways to grow!

How did you put together the initial capital you needed to start your business?
I’ve had a few people asking me about how I started and how they can do the same. With a limited budget my business began as what we would call a basic “lemonade stand”. Simple pop up setup, with limited resources but always strived to give the best quality product and customer service.
