We were lucky to catch up with Evelin recently and have shared our conversation below.
Evelin , appreciate you joining us today. Owning a business isn’t always glamorous and so most business owners we’ve connected with have shared that on tough days they sometimes wonder what it would have been like to have just had a regular job instead of all the responsibility of running a business. Have you ever felt that way?
Yes, I’m definitely happier as a business owner. Running my own coffee cart has been one of the most fulfilling experiences of my life. I love the freedom it gives me, the connections I make with customers, and the pride that comes from building something from the ground up.
It’s a lot of work—but it’s work I truly enjoy, and that makes all the difference. Sure, there are days when I wonder what it would be like to have a regular 9-to-5, especially when things feel uncertain or overwhelming. But then I remember why I started this in the first place: being outside, making great coffee, and chatting with people every day—it’s what I’m passionate about.
I wouldn’t trade that for a “regular” job. That said, I’m proud to say I funded my dream with my 9-to-5. Every paycheck, every side hustle helped me invest in Evie Coffee—and watching it grow has been worth every step.

Evelin , before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Hi! My name is Evelin—but everyone calls me Evie, and I loved how cute and personal it felt, so I named my coffee cart after it.
I’ve always dreamed of opening a coffee bar, but I realized that bringing the coffee experience to you was even cooler. That’s how Evie Coffee Mobile Bar was born. I come from a hardworking immigrant family, and since I was little, I’ve dreamed of owning my own business—something that blended creativity, service, and community. Today, Evie Coffee caters to weddings, birthdays, quinceañeras, hospitals, baby showers and corporate events for brands like Fossil, Gucci, and Alo. And so so much more! We’re known for our custom and signature beverages—from seasonal lattes and espresso cocktails to refreshers and hot chocolate. Every detail is intentional. We go all in on themed setups, branded carts, personalized cups, custom menus, and even latte art that matches your vibe. What I’m most proud of, though, are the connections we build. I get excited every time we’re rehired or recommended by word of mouth—because it means the experience meant something.

Can you talk to us about how you funded your business?
There’s a saying: “Work your 9–5 to fund your 5–9—until your 5–9 lets you quit your 9–5.” And that’s exactly what I did. Every pop-up, every to-go order, every tip jar—I saved or reinvested every dollar to build what is now Evie Coffee Mobile Bar.
When the idea first came to life, it was never just about coffee. It was about creating something beautiful, unique, mobile, and memorable—a space where thoughtful design meets great espresso. But dreams need dollars, and we were starting from scratch. I self-funded everything. My startup capital came from bottled drink sales at pop-ups, side gigs, and saving every dollar I could. I bought my first cart custom on Facebook, which helped me cut costs, and I started with a Breville machine before upgrading to commercial equipment. I began with just a table, and now I own four mobile coffee bars—and even a photobooth!
Today, I’m almost fully booked, and I’m deeply grateful for every person who has supported me along the way. From pop-up regulars to wedding clients and fellow vendors, this journey has been fueled by community, hustle, and heart.

How do you keep your team’s morale high?
I love my team—we’re small but mighty. I always emphasize that we’re not just serving coffee; we’re creating caffeinated, memorable moments for our guests. Celebrating wins is a big part of our culture. Whether it’s a smooth setup or pack-down, a happy guest who loves the menu, or a wedding that goes off without any hiccups, we take time to acknowledge and celebrate those moments. Communication is key, especially in a mobile setup. I leave notes and take photos to show how the setup should look and explain why it matters—this keeps everyone aligned and confident. Of course, things will go wrong in mobile coffee—weather, traffic, equipment issues—but I try to model calmness and use humor to remind the team that it will all be okay. We’re in it together, and that makes all the difference.
