Essa , appreciate you joining us today. What was it like going from idea to execution? Can you share some of the backstory and some of the major steps or milestones?
Back in 2023 we decided to open up a food truck! We brought Nashville style chicken to our area, we were the first to bring the true style and it took off!
Since being featured in your magazine our first year, things have been amazing!
We are now going into our 4th year, and opening a brick and mortar location.
Over the past three years, we’ve slowly worked on building relationships within our community, establishing our brand, and having a lot of fun while we did it!
Now going into our fourth year we have established an amazing following and reputation. We are ready to bring Hot Biddys to our community year-round.
Going from Food truck life to restaurant life will be a change but we are ready!
The food truck will still be out kicking it in all our favorite spots.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your background and context?
Now going into our fourth year, we are opening a brick and mortar location located at 5120 West Michaels Dr. in Appleton Wisconsin.
We are very excited to give our Biddy followers a new place to watch the game, bring the family, have a beer on our huge patio and of course eat delicious hot chicken.
While we slightly transition to restaurant life, the food truck will still be out at all of our favorite spots throughout the valley. This is a crucial part of connecting with our community and building those awesome relationships with our followers.
We are excited for the growth and the opportunity to get more creative expanding our menu, and collaborating with other local businesses!
This restaurant will just be an extension of what we hold true. Community, family, and building relationships over the best Hot chicken in the valley.!

Can you tell us the story behind how you met your business partner?
As we grow, we were fortunate enough to bring on our lifelong friend Tim Christensen along, who has also been in the restaurant world for many years.
After working on the food truck with us for over a year, he fell in love with the business as much as we did. Aligning all of our goals and motivations together.
Bringing on someone that’s a lifelong friend and someone we trust, was key for us. It brings a new perspective and life to the business.

Any advice for growing your clientele? What’s been most effective for you?
For us the most effective way to grow our following is in those small moments and relationships we have built. Being open with our clientele and our followers.
From posting about New specials and asking their thoughts, Helping sponsor local baseball teams. Truly caring and connecting with our community..
When me and my husband started this business, it was just our small family trying to make a living in this community, everyone rallied behind us and truly supported us.
We stay real about life and business online, which I think people appreciate the realness.
