Alright – so today we’ve got the honor of introducing you to Ernesse Attelus. We think you’ll enjoy our conversation, we’ve shared it below.
Hi Ernesse, thanks for joining us today. Any advice for creating a more inclusive workplace?
When I started my career in Culinary Arts 12years ago, my goal was always to create an working environment where staff can share their passion for food and serving people. Servant leaders I would say, goal was to always make a difference. Goal was always to demonstrate the most high customer service, that’s what I train my staff on. In my kitchen we cook with love, that’s what set us apart from other restaurants. Also being consistent is something I strive in.
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
I Graduated from the Art Institute of Ft.lauderdale in 2012. Starting my Culinary experience working for Papa John’s Pizza & Jets Pizza out of Florida. Shortly after that I step away from cooking and started working for Walmart for 6 1/2 years. During that time was I attending Culinary Arts School, before finishing my Associates Degree I decided to deepen my Culinary experience by working for Waldorf Astoria Collection Hilton Hotel Located in Boca Raton Florida. From there my Culinary Journey began. Now im the Executive Chef at MorningStar Senior Living in Kirkland Washington, Independent Luxury Senior Living. Where we have a Iron Steel Restaurant & Bar offering Restaurant style meals to our lovely Residents & Guest.


What do you think helped you build your reputation within your market?
I would say my style of Cooking, with my Caribbean background. Family being from Haiti & born in Freeport Bahamas. I bring that fusion style of cooking to Senior Living. Incorporating my flavor profile to the amazing cold water seafood in the Pacific Northwest is a different type of experience.


We’d love to hear about how you keep in touch with clients.
By always taking the time to go out to the dining room to check on my guest and their experience. As the chef staying connected with our Residents and guest is a plus. Hearing their experiences and suggestions helps me as a Professional Chef.
