We caught up with the brilliant and insightful Erica Sundberg a few weeks ago and have shared our conversation below.
Erica, thanks for taking the time to share your stories with us today Let’s start with the story of your mission. What should we know?
To bring a smile, some laughter and good quality food to folks. We wanted to serve food that we grew up on in northern Minnesota. When we left Minnesota a couple times during the course of our lives, we were unable to get our favorites but in Minnesota and sometimes only northern MN. Thats where we knew we wanted to serve Porketta to start with and the rest evolved from there. We have put a fun twist on our sandwiches. Our concept is different from what you see around here. My husband began this dream over 25 years ago. We had tragedy strike as many do. The dream was put on the back burner but we kept it alive. We would hold meetings with my brother and kids, and we would brainstorm and talk about the food we wanted to create and serve. In 2022 there was an opportunity to buy a trailer and we looked at each other and said its now or never. Let’s do it. We are doing it!!

Erica, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Our love for food got us into this industry. My husband, Ted and I have been talking about doing this since the kids were young. We talked for many years about what we wanted to serve and the type of food truck that we wanted to be. We have been testing food and concepts for years. We pride ourselves in the quality of food that we serve. We pride ourselves in the concepts of the sandwiches. We pride ourselves in how far we have come in life. Being a business owner changes a person and their perception of life, to the better for most I would venture to say.

How’d you build such a strong reputation within your market?
We believe that good quality food is the foundation for our food truck. Great food will bring people back. Food that people crave and food that people wont necessarily always make at home, but you can get it from Buns To Go. We want to make people smile and food does that. Food can change your day around. Food is like music, its like love, its a universal language. We can speak to each other through food.
Can you share a story from your journey that illustrates your resilience?
My family is very resilient. In 2004 we were in a horrific car accident in the cities. My family tells me I had no pulse for awhile. The jaws of life had to help my family and I get out of the vehicle and then I was airlifted to the hospital. This is the tragedy that put our dreams on hold. I couldn’t’ walk for quite some time and had multiple surgeries done. My husband was also in hospital and luckily the families rallied around us and helped out. Aunts, uncles, cousins, the whole shebang. Everybody helped and we are eternally grateful. It took many years to get past this and to move on as much as we could. To date, I deal with pain daily but being in that food truck and serving people good food is the ultimate! When the folks make it a point to come back to the food truck and tell us how much they enjoyed what we have created, makes it worth it. Knowing we are working towards leaving something behind for our children and grandchildren is the end goal.
