Hi Emmie, thanks for joining us today. Risk taking is something we’re really interested in and we’d love to hear the story of a risk you’ve taken.
When I was 23, I took a leap that completely changed the trajectory of my life—I moved from Boston to Australia… alone. I didn’t know a single person there. At the time, I was a full-time math teacher, following the secure, safe, predictable path I had always known. But deep down, I had a bigger dream: to become a content creator.
So, as soon as the school year ended, I packed my bags and headed to the other side of the world. In true “type A personality” fashion, I secured a teaching job in Australia as a safety net—but at the same time, I emptied my entire savings account to invest in a business coach who could help me build my online business from the ground up, and fully rebranded as “Healthy Emmie.”
Eight months later, that risk paid off. My business was thriving, and I walked away from teaching completely. Now, seven years later, I’ve built a career doing what I love.
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
I’ve been making online content since the prehistoric days of the internet. Seriously—my first viral YouTube video was called ‘Staring Contest With a Cat.’ It was just a video of my cat refusing to blink for the entire clip. Objectively, the most boring video ever—but back then, YouTube had so little content that it somehow took off. From there, I started posting everything from music videos with my friends to fashion, hair, and makeup content. I was obsessed with creating videos. (And before you try searching for my old channel—those videos are long gone!) I always had a camera in my hand, capturing moments and editing them together. So, at my core, my passion has always been content creation.
Then, in college, I started adding in content about nutrition. I’ve been eating a plant-based diet for over a decade, and when I started posting about it, those videos gained traction. There weren’t many plant-based content creators in the space, so my channel became one of the better-known ones. To capitalize on the potential here, I earned certifications in nutrition, rebranded my channel as as “Healthy Emmie”, and launched my coaching program, Slim, to help people reach their health goals—mainly weight loss—on a plant-based diet.
I already told you about my move to Australia in 2018 at age 23 and how that was a huge turning point for me… but it wasn’t until 2020 – when I documented my mom’s journey on my Slim Program, that things really took off. She was struggling with post-menopause weight gain and high cholesterol, and I wanted to show, in real time, whether my program actually worked. Thousands of women connected with her story because she was so relatable—just an everyday woman trying to take back control of her health. We documented her progress in my Healthy Mummy Series on my Healthy Emmie YouTube channel, and sure enough, her weight and cholesterol dropped into the normal range. She couldn’t believe it! To this day, it’s one of the most impactful projects I’ve ever done.
Her success inspired thousands of women to join the Slim Program, and that was a turning point for my business. Over the past six to seven years, I’ve guided thousands of people through the program, helping them transform their health—not just through what they eat, but through a deep mindset shift. What sets Slim apart is that it’s not just about food. We dive into reflective journaling, meditations, and mindset work to address the root causes of food struggles, helping people find true peace with food and themselves.
Coming from a teaching background, I also take a unique approach to my content. I break down complex health concepts into simple, digestible explanations—often using metaphors and visuals—so that people actually understand the “why” behind what they’re doing. I can’t tell you how often I hear, “Why did it take me ___ years to learn this? You make it so simple!”
What do you think helped you build your reputation within your market?
Consistency and dedication—without a doubt. I’ve been posting on YouTube for over 15 years, and in the plant-based nutrition and health space, I’ve shown up consistently for over a decade. I haven’t missed a beat in 10 years.
With my clients, I host a live Q&A video stream every Monday, and I haven’t skipped a single week since I started over six years ago. Whether I feel like it or not, I show up. I made videos when no one was watching, wrote when no one was reading, and kept talking when no one was listening. But I stayed consistent. And in the end, it’s the person who keeps showing up—day after day, year after year—who succeeds.
Let’s talk about resilience next – do you have a story you can share with us?
I once invested over $40,000 in a consulting company—only to realize it was a scam. I cried more tears than I can count and vividly remember sitting in my car, on the phone with my boyfriend (now fiancé!), completely defeated. I told him, “I don’t know if I can do this. Being a business owner is so hard. What if I just ruined everything?” And he said something I’ll never forget: “If there’s anyone I know who can do this—it’s you.”
That was five years ago. And here I am now, with a business that’s not only still standing but thriving.
If owning a business were easy, everyone would do it. But the truth is, it’s lonely, scary, and stressful. There’s no success without those crying-in-your-car moments. No reward without the setbacks. This journey takes grit. But for every moment you feel like giving up, there will come a day when you look back and feel so unbelievably proud of yourself for pushing through.
