We caught up with the brilliant and insightful Elizabeth And Elliot Collett a few weeks ago and have shared our conversation below.
Elizabeth and Elliot , thanks for joining us, excited to have you contributing your stories and insights. Do you take vacations? How do you keep things going – any advice for entrepreneurs who feel like they can’t step away from their business for a short vacation?
Yes, we definitely make time to step away and focus on our two young girls. Family is a top priority for us, and being present in their lives is number one. At the same time, we also want them to see us working hard and building something we’re passionate about. Running a food truck/catering company can be demanding, with long hours of prep and service, so it’s important for us to take breaks to reset and recharge. It helps us come back refreshed, with new ideas and energy to keep pushing forward. We started this business with the goal of maintaining a good work-life balance, and taking that time away is key to making sure we stay energized and focused for both our family and the business.

Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
We’re Elizabeth (Izzy) and Elliot, a husband and wife team who decided after spending 10 years in Nashville, it was time to
move back to our small town in Eastern KY and we who bring our food truck to life.
Izzy brings over a decade of restaurant experience, while Elliot’s passion for food grew through his travels playing music around the world. Together, they design a menu full of from-scratch sandwiches and dishes, many of which are named after beloved musicians, bands, and the people who inspire them.
Our food is more than just meals—it’s about building connections and creating moments. We’ve combined our love for quality food with the joy of connecting with others, and that shared passion forms the foundation of Longer Table FC.
We strive to use only local farms and local ingredients when we are able and the season is right to ensure that the food we serve meets our standards and is the freshest it can be.
Our food truck is all about fostering a friendly, laid-back vibe where the community can come together, chat, and enjoy great food. We truly believe that “When you have more than you need, build a longer table, not a higher fence,” and that everyone is welcome at our table.

Any stories or insights that might help us understand how you’ve built such a strong reputation?
Consistency and quality have been at the heart of everything we do. From day one, we’ve prioritized serving food that meets our high standards, while offering something unique to the community. We also keep things fresh by changing our menu often, introducing new flavors and dishes to keep the experience exciting for our customers. They know they can rely on us for a dependable experience—whether it’s their first visit or their hundredth. The commitment to doing things right, without cutting corners, has been key to building trust and earning a strong reputation.

What’s been the most effective strategy for growing your clientele?
Honestly, it’s been a mix of Facebook and word-of-mouth. Facebook has been a game-changer for us. Since it’s the platform most people in our area engage with daily, it’s where we focus our efforts to connect with the community, share new menu items, and engage with customers directly. But word-of-mouth has also been huge. Our loyal customers have been our best advocates, telling their friends and family about us and bringing in new faces. Together, these two have really helped us grow in our community as well as others.
