We were lucky to catch up with Eduardo Morales recently and have shared our conversation below.
Eduardo, thanks for taking the time to share your stories with us today How did you come up with the idea for your business?
I met my wife while I was in law enforcement in the state of KS. She was working in a food truck. I had a business in trucking in the food industry. We got married and purchased a bread truck in the sate of Oregon. I picked up the truck in Oregon and took it to our home town of Heber City, UT in 2014. In 2015 we transported the bread truck to MN. I was a business man in the food trucking industry who had a passion in cooking authentic Mexican food. My wife Maria had a passion in authentic Mexican food. We decided to purchase the truck to eventually make an authentic Mexican food truck. Not your typical Mexican truck but real authentic Mexican food starting from freshly made tortillas to freshly cut marinated meats! So we opened our doors in a rush after having it sitting for nine years! We were invited to be part of an event for a Mexican celebration of September 16 Mexican independence. This is where all the fun started! We knew we had to offer something different than anyone else! We started with the freshly made tortillas to home made birria! Something difficult to offer as a freshly made item in a food truck! Absolutely delicious!

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
We know many Mexican food truck describe themselves as authentic Mexican food. We have a problem with these food trucks labeling themselves as authentic Mexican food. People think we are all the same. We are not!. Authentic Mexican food comes from Mexican experience and having knowledge of what real authentic Mexican food is! Serving 2 tortillas in a taco that is store bought is not authentic. A real tortilla will withstand a taco by itself. No need to have two tortillas. We offer freshly made tortillas and will not break in a taco due to it being freshly made. Along with our freshly made meats of asada, Al pastor (trompo), barbacoa, birria, lengua, tripas, and marinated chicken. Not to leave behind, our home made salsas!

Let’s talk M&A – we’d love to hear your about your experience with buying businesses.
We had been parking in a lot in Renville for a while. We always have a vision of purchasing a business building that has not been in operation for over 10 years. This building was located behind our residence and the owner at that time was very hard to talk to in regards to purchasing the building. We had no personal experience in this, we only heard of people who wanted to purchase the building. Within a short time, the owner came up to us and offered the building to be purchased from him! We did not hesitate! This building was in my childhood. I was 15 when I first came to this business called back then the Malt Shop! It was a pleasure to buy this building and bringing something back to the community! After over 16 years of nothing happening in this building, we are now wanting to bring a Mexican restaurant. We are currently opening a second truck and will start on the building after this truck is done. We finally have the gas company marking up to place the knew gas lines, and are now waiting for our local electrical company to install a knew electrical meter box! After that is done, we will start with getting the building open up again after over 16 years!

Can you tell us about a time you’ve had to pivot?
When I was in the trucking industry, I was always away from my family! Seeing how the trucking industry was heading, and having two beautiful young children, I had to make a change. I have older children who I missed out a lot in their childhood. I was not ready to do the same with my younger children! And that was the best choice I have ever made. No matter how much money I would make, nothing will ever give me seeing my kids grow from childhood! Best choice I’ve ever made! Now I can be with my older kids, and see my young ones love me the same as I love them! Now that I am older in age, I see the value of being with your loved ones! Never forget what is more important than anything In this life. Family always comes first! It took me a while to see that. Shame on me!
