We caught up with the brilliant and insightful Edgar Serrano Ramos a few weeks ago and have shared our conversation below.
Alright, Edgar thanks for taking the time to share your stories and insights with us today. What’s something crazy on unexpected that’s happened to you or your business
Our Craziest Story (Before We Even Opened!)
Before Las Tias officially hit the streets of Las Vegas, we went through what felt like every possible hurdle to get our food truck ready for permits. From failing a smog check, to rebuilding the entire kitchen, to surprise mechanical repairs — you name it, it happened.
Finally, after months of setbacks, the only thing left was to take the truck to get wrapped — the moment it would finally start to look like Las Tias. Spirits were high, and we thought, “What else could possibly go wrong?”
As it turns out, one more thing.
On the way to the wrap shop, one of the Tías was driving the truck while another followed behind. The one following recalls, “I saw the tire wobbling a little and was about to call my sister driving, but I was on another call. As soon as I hung up to warn her, she made a small turn — and I just saw the wheel roll off and keep going straight on its own!”
Meanwhile, the Tía behind the wheel thought she had a flat tire. She carefully pulled into an empty parking lot, only to realize the wheel was completely gone. The truck tilted to one side, making the door too heavy to open — so she climbed out the window instead!
And right at that moment, a random passerby walked up and asked, “Hey, are you open?”
Thankfully, no one was hurt, and the runaway wheel didn’t cause any damage. Looking back, we can laugh about it now — it’s one of those unforgettable moments that truly tested our patience, teamwork, and sense of humor. Today, it’s one of our favorite stories to share — a reminder that even when things go sideways (or when a wheel rolls away), Las Tias keeps moving forward with love and laughter.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
About Las Tias
Las Tias is a family-run Mexican food truck in Las Vegas, founded by six aunts who share a passion for authentic, home-style Mexican cuisine. Our journey started with a simple mission: to bring the warmth, flavor, and joy of a family meal to the streets of Las Vegas, letting everyone feel like they’re visiting their favorite aunt for dinner.
We offer a menu full of classic favorites — tacos, burritos, quesadillas, and especially our signature Las Tias Fires and Qusabirrias. Everything is made fresh daily with high-quality ingredients sourced from top vendors, and we prepare meals to order so each bite reflects our commitment to flavor and care.
What sets us apart is our combination of family love, attention to detail, and a genuine desire to create an experience, not just a meal. Whether it’s serving a quick lunch, catering a corporate event, or being part of a local festival, our goal is to make every customer feel welcomed, happy, and well-fed.
We’re proud of how far we’ve come — from navigating countless challenges before opening to now delighting the Las Vegas community with our food and presence. For us, it’s not just about tacos and burritos; it’s about connection, family, and sharing a little joy through every plate.
We want our clients and followers to know that when they visit Las Tias, they’re getting more than food — they’re getting warmth, care, and a taste of home, served with a smile.

Can you talk to us about how you funded your business?
Starting Las Tias was truly a family effort — not just in running the business, but in bringing it to life financially. In the early stages, the initial capital we needed came from contributions from the six Tías themselves and their partners. Each one contributed personal funds, which we pooled together to cover essential startup costs like purchasing the food truck, outfitting the kitchen, obtaining permits, and making necessary repairs and upgrades.
Because this was a new venture for all of us, we approached the funding process carefully, making sure every dollar went toward building a strong foundation. Some purchases were made directly with partner contributions before the remaining funds were deposited into the business account. This hands-on approach allowed us to move quickly and make critical decisions without waiting on external financing.
The story of funding Las Tias reflects our collaborative spirit and commitment to the business. It wasn’t just about raising money — it was about trusting each other, planning carefully, and taking the leap together. That teamwork and dedication are at the heart of everything we do, and they continue to guide us as we serve our community in Las Vegas.

What’s been the best source of new clients for you?
For Las Tías, the best sources of new clients have been a combination of our website, social media, and word-of-mouth referrals. Our website serves as a central hub where potential customers can learn about our menu, catering options, and find us at events. Social media allows us to engage with our community, share our story, and show behind-the-scenes moments that highlight the personality and passion behind our food.
Referrals from happy customers and event clients have also been incredibly valuable. There’s nothing more rewarding than someone enjoying our food and recommending us to friends, family, or colleagues — it reinforces the trust and connection we aim to build with every guest.
Together, these channels help us reach new audiences while keeping our existing community engaged and excited about Las Tías.
