Dean , appreciate you joining us today. Alright, so we’d love to hear about how you got your first client or customer. What’s the story?
After years of experience in fine dining restaurants and as a private caterer and chef in bustling cities like NYC and Los Angeles, I made the decision to relocate to Palm Springs and open a small, grab-and-go style restaurant. However, as I was in the midst of searching for the perfect location, the COVID-19 pandemic hit, throwing everyone into uncertainty.
Just when I didn’t know what to expect, a friend reached out to me with an unexpected opportunity. Three families had rented an estate in Indian Wells and were in need of a chef to stay in their guest house, be present on the property at all times, coordinate produce orders with their drivers for three months, and prepare meals for a total of 17 people – 6 adults and 11 kids.
Throughout my career as a private chef, I have had the privilege of working with many high-profile clients, including several world-famous celebrities. However, my experience with these particular families was truly special and heartwarming. Over the course of three months, we formed a close bond, and they felt more like brothers and sisters to me than clients. The children, in particular, were absolutely precious.
One little girl, Ruchama, would follow me around the kitchen, tugging on my apron and calling out, “Chef Dean, come with me!” She would lead me to the TV room and ask me to play games with her. At just 6 years old, she was so sweet and endearing. All of the children were incredibly smart and delightful, and the adults were equally amazing.
Despite the challenges of the pandemic, some of the best memories were created during those late-night kitchen gatherings at 11:00 PM, preparing and enjoying pizza together with the families. The bond we formed during those moments was truly special, and even now, we continue to stay in touch. Last year, Osher reached out to me to surprise his wife and cook for them and their friends on their anniversary.
The memories of those times with the families are cherished, but there is also a sense of loss and longing. My dear friend Michael Elefante, who was a part of those special moments, passed away last year. His presence and friendship are deeply missed.
After the families departed and returned to their homes, I decided to establish my own private chef business in Palm Springs. It has been a fulfilling experience for me, as I take great pleasure in bringing joy to people through my culinary creations. I have had the opportunity to meet and connect with a variety of wonderful individuals since starting my business, and each encounter has been truly rewarding.

Dean , love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
At the tender age of 6, I found my passion for cooking while assisting my grandfather in his bakery shop, where I would play with small pieces of dough and create adorable animal-shaped breads. Growing up in a family of culinary enthusiasts, with my uncle being a talented chef and my father a true gourmet, I was surrounded by delicious homemade organic food. This upbringing fueled my dream of becoming a skilled chef one day.
My military background instilled in me a sense of discipline, which not only shaped my work ethic but also ensured that my uniforms were always impeccably sharp and crisp. I take great pride in working in the kitchen, meticulously preparing dishes and serving them with elegance using crisp linen napkins, fresh flowers, and pristine white plates. My ultimate goal is to create memorable dining experiences for my clients, with the hope that they will return and consider me their personal chef.

Do you have any insights you can share related to maintaining high team morale?
I have a strong focus on teamwork and believe in providing proper training for my team. It is important to me that people learn from my experiences and have the opportunity to grow and succeed in their own lives. Building a solid and trusting relationship with my team is crucial, and I value honesty, direct communication, and genuine care for their well-being as key components in fostering a supportive and collaborative work environment.

Any stories or insights that might help us understand how you’ve built such a strong reputation?
I prioritize building strong, personable relationships with my clients in a professional manner. We work together to craft menus and plan events collaboratively. Throughout the event, I strive to ensure that everyone involved is on the same page. This personalized communication not only enhances my reputation but also complements my culinary skills, creating a memorable and successful experience for all.
