We were lucky to catch up with Dale & Monique Golding recently and have shared our conversation below.
Alright, Dale & Monique thanks for taking the time to share your stories and insights with us today. Alright, so you had your idea and then what happened? Can you walk us through the story of how you went from just an idea to executing on the idea
Dale always wanted to own a food truck, but narrowing down to a single idea was harder than expected. Finally, during a trip to the northwest, we were by a crazy chain of events, introduced to real fruit ice cream. Once we both tried it we knew this was the idea we wanted to pursue.
It was after this revelation of what we wanted our food truck to be that we started working to make it a reality. Monique found an old trailer for cheap on the internet. We bought it a few days later. After buying it, Dale researched how to turn it in to a commercial kitchen while Monique researched the business part of things. Many a midnight oil was burned by Dale to build the trailer in to what it is today. He googled and youtubed everything from flooring to plumbing to electrical – it was hours and hours of hard work to rebuild. After sorting out all of the licensing and health department requirements we were finally a legitimate business. We launched in June of 2024.
We’ve had a lot of trial and error moments since that time- increasing efficiency, figuring out marketing, building a website and brand, and gaining business-tax literacy. Everything you never think of when the initial idea of “starting a business” is thought. We have been very grateful for the patience and kindness of our customers. We wonder every day why we are so lucky to have the people we do rallying behind us. It really is because of them that we are living this pipe dream.
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
We are both employed in the health industry along with owning our trailer. Dale is a nurse and Monique is a pharmacist. Our professions really instilled in us a sense of serving others and caring for people. Dale has always really loved food and serving others food. Ice cream is the ultimate joy giving food – so we figured it would be a great way to spread some goodness to others.
We have a motto in our company; “love you” – we hope that people do feel loved when they come to our establishment and that we can spread love around. We include it in our branding and marketing and hope people feel it when they visit because the world could use more of it.
Another thing that sets us apart is our self proclaimed title “home of the glimmer”. A gold, edible dusting that can be added to our ice cream to make it feel extra magical. A friend recently brought to my attention this definition of glimmer – “moments in your day that make you feel joy, happiness, peace, or gratitude.” We really hope that when people see our glimmer or try our ice cream it brings moments like that in their lives. A pause, a moment of joy, where they feel appreciated.
We really hope these things set us apart from others. Real fruit ice cream is a newer concept in Utah. There are a only a couple of establishments that serve it. Our unique twists – home-made cones and whipped cream, the glimmer, no upcharge for toppings or a waffle cone, and our honest desire to give people a good experience we hope will keep people as loyal customers for many years to come.
Can you tell us the story behind how you met your business partner?
As business partners and life partners we’ve been working together through life for over 14 years. We met while running track in college at UVU. Dale was a distance runner and Monique was a sprinter-hurdler. The cliché phase that opposites attract proved not so cliché in our case. Dale had a dream and together we created a reality from it.
What’s a lesson you had to unlearn and what’s the backstory?
We naively thought we had a grasp on what we were getting ourselves into starting a business, but we quickly learned that we didn’t know what that really means.
Generally we had heard of others “starting businesses” and figured it couldn’t be that hard. Boy were we humbled when it came to licensing and fulfilling standards for the health department. Then we were further humbled when we got tax threats in the mail when we didn’t realize we were supposed to pay our taxes quarterly. There have been so many small things we’ve learned that have really helped us appreciate anyone else that has started a business. There are a lot of things that we never even thought of that we have been forced to think of when starting our business.
