We were lucky to catch up with Courtney Lindsay recently and have shared our conversation below.
Courtney, thanks for joining us, excited to have you contributing your stories and insights. Let’s start with a story that highlights an important way in which your brand diverges from the industry standard.
As a vegan chef that once cooked meat items, I’m pushed to the limit as far as creativity goes. Most vegan restaurants simply take vegan products, put them on a plate, and call it a day. In my craft, I try to make sure I touch key components that I feel make up a person’s dining experience. Those components are sight, smell, texture, and taste. People eat with their eyes first and once the smell tickles their scent glands; I know I’ve almost got them. Then comes the texture; the mouth feel of a morsal of food on a person’s pallet can transport to a path of a familiar place and time that allows the flavor to come in and take them away. I’ve been blessed to have a muse in my wife, Chasitie; that pushes me to create dishes that I, at times, don’t believe are possible. She’s the reason I’m the creative chef artist that I am today.
Courtney, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
I my name is Chef Courtney Lindsay and I’m a native Houstonian, who discovered a passion for food at an early age cooking for three younger sisters. I attended Texas Southern University and joined US Army shortly after graduation. After serving in the army for four years, I made the decision to pursue formal culinary training at The Art Institute of Houston, where I honed my self-taught skills and developed a signature style. In 2017, my wife and I embarked on a vegan journey that would forever change the way I approached food. What began as a personal commitment to support my family’s dietary choices soon blossomed into a thriving venture into the world of vegan cuisine.
I’ve been able to create three food trucks concepts, seven signature sauces, a vegan food store, and a bustling breakfast
restaurant, Mo’ Better Brews. Mo’ Better Brews, Houston’s first 100% vegan, coffee & vinyl creative space. It is a full-service restaurant and bar catering to the area with curated tunes, drinks, and brunch-inspired eats. In addition to culinary success, I’ve just completed my first children’s cookbook about learning to be little chef with my son Chase; intitled “Chase the Chef.”
Any insights you can share with us about how you built up your social media presence?
Social media is the one the most important tools that we have today as small businesses. I’d say the key to somewhat cracking the code is to be organic in your social media presence and growth. Post often and be authentic, because people only see what’s in their faces. People also want to connect with a story, and we’ve been able to take people on our growth journey through our social platforms.
Can you tell us the story behind how you met your business partner?
Partnerships are the most important thing when it comes to business. And lucky for me I met my business partner and wife in college over twenty years ago and we are still rocking.
